Cross-cultural differences in consumer quality perception of rice

We present a cross-cultural study aiming at understandinghow consumers from four countries (French, Japanese, Korean and Thai) perceive, describe and appreciate rice and ricequality. La Convention européenne du paysage (ELC), adoptée en 2000 par le Conseil de l’Europe, définit le paysage comme « une partie de territoire telle que perçue par les populations, dont le caractère résulte de l’action de facteurs naturels et/ou humains et de leurs interrelations» (Conseil de l’Europe, 2000). Cette convention, qui met l’accent sur l’expérience humaine du paysage, souligne l’importance de sa protection, de sa gestion etde son aménagement.

Unvolvement of calcium signaling and MAP kinases in lipid taste perception

In this work, we demonstrate that stromal interaction molecule 1 (STIM1), a sensor of Ca2+ depletion in the endoplasmic reticulum, mediates fatty acid–induced Ca2+ signaling in the mouse tongue and fat preference. We showed that linoleic acid (LA) induced the production of arachidonic acid (AA) and lysophosphatidylcholine (Lyso-PC) by activating multiple phospholipase A2 isoforms via CD36. This activation triggered Ca2+ influx in lingual CD36-positive taste bud cells (TBCs) purified from mouse CVP. LA also induced the production of Ca2+ influx factor (CIF). Impact of obesity on the oro-sensory detection of dietary lipids in mice and humans

Gustation is an essential parameter in the oro-sensory detection of dietary lipids. In mice and most likely in humans, the binding of long-chain fatty acids to the CD36 receptor plays a major role in this oral fat detection. Gustation is involved in the food choice (fat sensitivity) as well as in the preparation of the body to the fat inflow. This oral lipid sensing is highly regulated. As obesity seems to be responsible for an alteration of the basic tastes detection, the aim of this thesis was to investigate whether obesity can impair the oral lipid detection in both mice and humans.
