Omega-3 long-chain polyunsaturated fatty acids (LC-PUFA) play a central role in neuronal growth and in the development of the human brain, and a deficiency of these substances has been reported in children with attention deficit hyperactive disorder (ADHD). In this regard, supplementation with omega-3 polyunsaturated fatty acids is used as adjuvant therapy in ADHD. Seafood, particularly fish, and some types of nuts are the main dietary sources of such fatty acids in the Spanish diet. Lipid peroxidation was investigated in relation with the hypersensitive reaction in cryptogein-elicited tobacco leaves. A massive production of free polyunsaturated fatty acid (PUFA) hydroperoxides dependent on a 9-lipoxygenase (LOX) activity was characterized during the development of leaf necrosis. The process occurred after a lag phase of 12 h, was accompanied by the concomitant increase of 9-LOX activity, and preceded by a transient accumulation of LOX transcripts. Free radical-mediated lipid peroxidation represented 10% of the process. International audience; The aim of this work was to compare the effects of coconut and salmon oils on rat liver microsomal Δ6 and Δ5 desaturations, during protein restriction. A higher Δ6 desaturase activity was noted in rats fed the low-protein coconut oil diet, in comparison with that occurring in rats fed either a low-protein or normal-protein salmon oil diet. No variation was observed in Δ5 desaturase activity or in 20:4n-6/ 18:2n-6 ratio. Abstract The influence of dietary heated linseed oil on the fatty acid composition of rat liver, platelet and plasma phospholipids (PL) with particular reference to the metabolism of linoleic acid (18:2 n-6) were studied. Δ6 and Δ5 desaturase activities and fatty acid composition of hepatic microsomal total lipids (TL) also were determined. Two groups of male weanling rats were fed, for 6 weeks, diets containing 10% (in weight) of a fresh linseed oil (LO group) and of a heated linseed oil (HLO group). Identification by GC-FID and GC-MS of amino acids, fatty and bile acids in binding media used in works of art.

GC-FID was used as single methodology for the identification and differentiation of proteins, lipids and ox bile from binders used in artistic paintings. The samples were hydrolyzed by HCl. Subsequently, the simultaneous formation of volatile derivatives of the amino, fatty and bile acids with ethyl chloroformate was performed quickly and safely in an aqueous medium. Reduction of saturated fat in chocolate by using sunflower oil-hydroxypropyl methylcellulose based oleogels

The suitability of sunflower oil-hydroxypropyl methylcellulose (HPMC) based oleogel obtained by emulsion template approach as partial cocoa butter (CB) replacer in chocolates was investigated. A level of 50% CB replacement was optimum, as higher level of replacement affected the sensory appearance in comparison to the control chocolate (without added oleogel). Four levels of HPMC (0.5, 1, 1.5 and 2%) were considered. Here, we examined how the nutritional quality of prey affects somatic growth and the lipid, carbohydrate, protein, amino acid, and polyunsaturated fatty acid content of rainbow trout (Oncorhynchus mykiss) fry using a three-trophic-level experimental setup.
