Salt and fat contents influence the microstructure of model cheeses, chewing/swallowing andin vivoaroma release

The effects of the lipid/protein ratio (20/28, 24/24, 28/20) and salt content of model cheeses were investigated simultaneously with respect to chewing behaviour, swallowing events and in vivo aroma release. Chewing parameters were measured by electromyography. Swallowing events were recorded manually. In vivo aroma release was investigated using nose-space on-line atmospheric pressure chemical ionisation-mass spectrometry. The values for chewing activity and time before swallowing were higher with lower lipid/protein ratios and lower salt contents, due to the greater mechanical resistance of the model cheeses. Empirical Study on the Relationship between the Cross-Correlation among Stocks and the Stocks' Volatility Clustering

In this paper we discuss univariate and multivariate statistical properties of volatility with the aim of understanding how these two aspects are interrelated. Specifically, we focus on the relationship between the cross-correlation among stock's volatilities and the volatility clustering. Volatility clustering is related to the memory property of the volatility time-series and therefore to its predictability. Our results show that there exists a relationship between the level of predictability of any volatility time-series and the amount of its inter-dependence with other assets. Dieses kann in die zweite Hälfte des 1. oder an den Beginn des 2. Jh. n. Chr. datiert werden. Die archäologische Fundstelle, die sich im Talboden am Zusammenfluss von Crould und Morée befindet, gehört zu einer seit der späten Hallstattzeit genutzten Gräberlandschaft.
