Ohmic treatment of fresh foods: Effect on textural properties

The aim of this work was to verify the effects of ohmic heating (OH) treatment on texture of fresh solid food (without pre-treatment in brine solutions), subjected to constant electrical field gradient (1100 V/m; 2200 V/m; 3300 V/m). Samples of fresh potatoes, carrots and apples cut into cylinders (d = 30 mm, h = 9.0 mm) underwent OH for 60, 120, 180 and 240 seconds. Texture measurements were performed in a universal testing machine Instron 4301, with a 100 N load cell, using a single-cycle compression test. The raw untreated sample was used as control. Abstract A new simple and versatile technique to obtain mesoporous oxides is presented. While implying surfactant-assisted formation of mesostructured intermediates, the original chemical contribution of this approach lies in the use of atrane complexes as precursors. Without prejudice to their inherent unstability in aqueous solution, the atranes show a marked inertness towards hydrolysis. In most hydrologic modeling studies, the hypothesis is made that an improvement in the modeled soil moisture leads to an improvement in the modeled surface energy balance. [1] A total of 3140 individual particles were examined in 31 soils along Spirit's traverse. Their size, shape, and texture were quantified and classified. They represent a unique record of 3 years of sedimentologic exploration from landing to sol 1085 covering the Plains Unit to Winter Haven where Spirit spent the Martian winter of 2006. Samples in the Plains Unit and Columbia Hills appear as reflecting contrasting textural domains. Consumer texture preferences: Effect of age, gender and previous experience

Four different strawberry candies with varying thickening agents (pectin, gelatin, starch, and gelatin + starch) were rated by three consumer age groups: teenagers (13–14 years), young adults (19–23 years) and the middle-aged (40–63 years) (n = 60 in each group). Age, gender, use frequencies and hedonic ratings often commercial candy types were collected as background information. Four preference groups were found by using preference mapping.
