ABSTRACT: Most low water content or frozen food products are partly or fully amorphous. This review will discuss the extent to which it is possible to understand and predict their behavior during processing and storage, on the basis of glass transition temperature values (Tg) and phenomena related to glass transition. Two main conclusions are provisionally proposed. Firstly, glass transition cannot be considered as an absolute threshold for molecular mobility. Transport of water and other small molecules takes place even in the glassy state at a significant rate, resulting in effective exchange of water in multi-domains foods or sensitivity to oxidation of encapsulated materials. Karhunen-Loe`ve transform applied to region-based segmentation of color aerial images

The use of the Karhunen-Loeve transform (KLT) for region- based segmentation of aerial images by color and textural attributes is presented. Our aerial images are shown to be homogeneous color im- ages within the Karhunen-Loeve color representation space, which means they can be represented more easily and the region-based seg- mentation algorithms can be optimized. For texture analysis, the KLT is the basis of the local linear transform (LLT) and allows structural infor- mation about textures to be represented in an optimal and condensed manner. Shape and texture are an integral part of face identity. In the present study, the importance of face texture for face identification and detection of configural manipulation (i.e., spatial relation among facial features) was examined by comparing grayscale face photographs (i.e., real faces) and line drawings of the same faces.
