Ferric-bipyridine assay: A novel spectrophotometric method for measurement of antioxidant capacity

Measurement of the antioxidant potential using in vitro assays is paramount in the assessment of various food products and nutraceuticals. Researchers always attempt to develop more accurate assays which can be performed in unsophisticated conditions. Effect of oxidant stressors and phenolic antioxidants on the ochratoxigenic fungusAspergillus carbonarius

BACKGROUND There are few studies dealing with the relationship between oxidative stress and ochratoxin A (OTA) biosynthesis. In this work, we analyzed the effect of the oxidant stressor menadione and the antioxidants 3,5-di-tert-butyl-4-hydroxytoluene (BHT), catechin, resveratrol and a polyphenolic extract on growth, generation of reactive oxygen species (ROS), OTA production and gene expression of antioxidant enzymes of Aspergillus carbonarius. RESULTS Exposure to menadione concentrations higher than 20 µmol L−1 led to increases in ROS and OTA levels and a decrease in growth rate. Berries extracts as natural antioxidants in meat products: A review.

The aim was to evaluate antioxidants from berries as replacement food additives for inhibition of lipid and protein oxidation in meat and meat products, since meats are highly susceptible to oxidation. Oxidation can be delayed/retarded by synthetic antioxidants with phenolic structures (e.g. butylated hydroxytoluene). However, new natural alternatives are needed for synthetic antioxidants due to the controversy regarding their possible negative health effects and consumers' demand for more ‘natural’ food additives. Synthesis and characterization of new 1,4 and 1,5-disubstituted glucopyranosyl 1,2,3-triazole by 1,3-dipolar cycloaddition

Abstract A series of 1,4 and 1,5-disubstituted 1-(β- d -glucopyranosyl)-1,2,3-triazoles has been prepared in an efficient manner with excellent yields using the intermolecular 1,3-dipolar cycloaddition of 1-azido-2,3,4,6-tetra-O-acetyl-β- d -glucopyranose 2 to a variety of substituted alkynes phenylacethylene 3, propargyl alcohol 4, 2-butyn-1,4-diol, 5, 3-propargylbenzimidazole 6 and propargylpyrazole 7 in toluene. The reaction takes place with the formation of both 4- and 5-regioisomers.

Syntheses and properties of tetrathio- and tetraseleno metalates [(C5Me4R)2NbE2]2M (E=S, Se; M=Cr, Mo; R=Me, Et) with peripheric niobocene ligands

Abstract Reactions of Cp*2Nb(η2-S2)H 1 (Cp*=C5Me5 (a), C5Me4Et (b)) and Cp*2Nb(η2-Se2H) 3 with 0.5 equivalents of M(CO)6 (M=Cr, Mo) in boiling toluene give the CO free complexes [Cp*2NbE2]2M 4–7. X-ray diffraction analyses have been carried out for the Mo complexes 5a (E=S) and 7a (E=Se) showing that the structures contain ME4 tetrahedral cores with two attached niobocene ligands thus forming a nearly linear trimetallic unit. Absorption spectra and electrochemical studies of complexes 4–7 are described. Characteristic of the novel CrSe4 chromophor are four reversible one electron redox steps. Untargeted metabolomics to explore the oxidation processes during shelf life of pork patties treated with guarana seed extracts

The changes of metabolites in pork patties with different antioxidants added (control without antioxidants, 200 mg kg(-1) butylated hydroxytoluene (BHT) and 250 mg kg(-1) guarana seed extracts (GSEs)) under modified atmosphere (80% O-2 and 20% CO2) for 18 days of refrigerated storage were evaluated. Untargeted metabolomic approach based on UHPLC-ESI-QTOF-MS analysis was applied. GSE phytochemical profile revealed a wide variety of compounds (caffeine, glycerol 1-propanoate, amino acids, alkaloids and glycerophospholipids), together with antioxidants (tyrosols, procyanidins and flavonoids). Luminescent CdSe Quantum Dot Arrays for Rapid Sensing of Explosive Taggants

Chemical sensors based on fluorescent quantum dots have attracted intense interest because of their excellent optical and electronic properties compared to the routinely employed fluorescent organic dyes. This study reports a CdSe QD-polymer-based luminescent chemosensor, which is based on an array containing either green-emitting or red-emitting CdSe QDs embedded in polycaprolactone as a polymer host matrix. We evaluate the sensing capability of the nanocomposites by exposing both sensors to vapors of explosive taggants, explosive-like molecules, and some common solvents.
