Oxidation Processes in Sicilian Olive Oils Investigated by a Combination of Optical and EPR Spectroscopy

2012

:  Extra virgin olive oil (EVOO) is recognized as one of the healthiest foods for its high content of antioxidants, which forestall and slow down radical formation. Free radical-initiated oxidation is considered one of the main causes of rancidity in fats and oils. As a consequence, reliable protocols for the investigation of oil oxidation based on selective, noninvasive, and fast methods are highly desirable. Here we report an experimental approach based on UV-Vis absorbance, steady-state fluorescence, and electron paramagnetic resonance (EPR) spectroscopy for studying oxidation processes induced by temperature for a period up to 35 d on Sicilian EVOO samples. We followed the decrease in β…

Enteromyxum leei (Myxozoa: Myxosporea) infection in gilthead sea bream (Sparus aurata): Immune-related studies

2013

Consumer Preference Heterogeneity Evaluation in Fruit and Vegetable Purchasing Decisions Using the Best–Worst Approach

2019

This study assesses consumer preferences during fruit and vegetable (FV) sales, considering the sociodemographic variables of individuals together with their choice of point of purchase. A choice experiment was conducted in two metropolitan areas in Northwest Italy. A total of 1170 consumers were interviewed at different FV purchase points (mass retail chains and open-air markets) using a paper questionnaire. The relative importance assigned by consumers to 12 fruit and vegetable product attributes, including both intrinsic and extrinsic quality cues, was assessed by using the best&ndash

The influence of high pressure processing on antimutagenic activities of fruit and vegetable juices

1997

Abstract In model experiments using the Salmonella/reversion assay (Ames test) and the carcinogen 2-amino-3-methyl-imidazo[4,5-f]quinoline (IQ), antimutagenic activities against IQ had been detected in about 70% of 62 fruit and vegetable species [Edenharder, Kurz, John, Burgard and Seeger (1994) Fd Chem. Toxic. 32, 443–459]. However, thermal stability of the antimutagenic factors varied considerably. As hydrostatic pressure is an alternative to heat in food processing and preservation, homogenates of 14 fruit and vegetable species were exposed to different pressures and temperatures. According to the response of the antimutagenic potential, three groups of produce could be identified: (a) m…

Agronomic performance and energetic potential of two Brassica oilseed species in Sicily, Italy

2018

Industrial crops for energy purposes are object of increasing interest worldwide and play an important role as a source of renewable energy. The aims of this study were to evaluate: i) the agronomic performance of Brassica napus L. var. oleifera D.C. and Brassica carinata A. Braun in a semi-arid environment; ii) to evaluate the economic viability of a pilot combined heat and power (CHP) plant operating on pure vegetable oil (PVO). The research was carried out in Sicily (Italy). The main biometric and yield parameters of the two species were determined. Chemical-physical characterizations were carried out on PVO for each species using specific protocols. The cogeneration of renewable energy …

Effect of grafting on yield and quality of eggplant (Solanum melongena L.)

2013

Eggplants have fruits with different sizes, shapes and colours, according to the cultivar. Skin colour is due to anthocyanins, pigments located in the cell vacuole of fruit skin that belong to phenolic flavonoids, a powerful antioxidants group. Environmental conditions and growing techniques may influence fruits characteristics and their content of phenolic compounds. Grafting is a non chemical alternative for overcoming the effects of intensive and continuous cropping. The rootstocks preferred for eggplant are hybrids of tomato or tomato KVFN. Also species taxonomically close, as Solanum torvum, have been used and showed good vigour, compatibility and resistance to wilt disease. Informatio…

Health Risk Assessment of Exposure to 15 Essential and Toxic Elements in Spanish Women of Reproductive Age: A Case Study

2021

This case study investigates the exposure of 119 Spanish women of reproductive age to 5 essential (Co, Cu, Mn, V, Zn) and 10 toxic (Ba, Be, Cs, Ni, Pb, Pt, Sb, Th, Al, U) elements and assesses their risk. The essential elements (Co, Cu, Mn, V, and Zn) showed average concentrations (GM: geometric mean) of 0.8, 35, 0.5, 0.2, and 347 μg/L, respectively. Five of the toxic elements (Ba, Cs, Ni, Al, U) exhibited detection frequencies of 100%. The GM concentrations of the novel toxic elements were 12 μg/L (Al), 0.01 μg/L (Pt), 0.02 μg/L (U), 0.12 μg/L (Th), 0.009 μg/L (Be) and 4 μg/L (Cs). The urine analysis was combined with a survey to assess any variations between subgroups…

Characterization of Biodiesel from Vegetable Oil Using Comprehensive Two-Dimensional Gas Chromatography

2012

Biodiesel from vegetable oils has been analyzed and its suitability for internal combustion engines has been assessed. The Standard biofuel’s characteristics have been investigated. Gas chromatography (GC) tests were carried out to characterize the fatty acid behavior. It was found that the mass percentage of saturated fatty acids did not change substantially with time, while unsaturated fatty acids increased with time for both B100 and B30. An increase in density for B100 and B30 with time was noted. Biodiesel density was within the standardization. The calorific values of biodiesel and its blend increased with time. Higher heating value for B100 increased from 41 to 43 MJ/kg while B30 inc…
