Understanding the release and metabolism of aroma compounds using micro-volume saliva samples by ex vivo approaches

International audience; This study investigated the behaviour of key aroma compounds in the presence of human saliva (200 mu L) from different individuals (n = 3) submitted or not to centrifugation (whole vs clarified saliva). HS-GC results showed that human saliva strongly decreased the release of carbonyl compounds (aldehydes and ketones). This effect was dependent on i) the structure of the aroma compounds and ii) the saliva composition. Whole saliva exerted a higher effect than clarified saliva on aroma compounds. Aroma perception is an important factor driving food acceptance. Volatile organic compounds (VOCs) are released from the food matrix and then reach the receptors located in the nasal cavity, leading to their perception. These steps are closely dependent on the physicochemical properties of the volatile compounds and the food matrix, but also on human physiology. Validation of the Marathon Motivation Scale in Chile

The objective of this work was to validate the Marathon Motivation Scale (MOMS) for its application in the Chilean context. The study used a non-experimental, descriptive and transversal design. The sample was non-probability and intentional and was composed of 250 subjects (143 male and 104 female) runners who participated in the International Marathon of Viña del Mar with an average age of 29.8 (TD = 10.1) years. Exploring the NΛ–NΣ coupled system with high precision correlation techniques at the LHC

The interaction of Λ and Σ hyperons (Y) with nucleons (N) is strongly influenced by the coupled-channel dynamics. Due to the small mass difference of the NΛ and NΣ systems, the coupling strength of the NΣ↔NΛ processes is non-negligible and constitutes a crucial element in the determination of the NΛ interaction. In this letter we present the most precise measurements on the interaction of pΛ pairs, from zero relative momentum up to the opening of the NΣ channel. The correlation function in the relative momentum space for pΛ⊕p¯¯¯Λ¯¯¯¯ pairs measured in high-multiplicity triggered pp collisions at s√ = 13 TeV at the LHC is reported. Dynamic Risk Taking with Bonus Schemes

This paper studies dynamic risk taking by a risk-averse manager who receives a bonus; the company may default on its contractual obligations (debt and fixed compensation). We show that risk taking is time independent, and is summarized by the so-called risk aversion of derived utility. We highlight the importance of dynamic aspects and provide a foundation for common qualitative discussions that are based on characteristics of bonus functions. The paper cautions that deferral of fixed compensation may increase risk taking. Finally, we motivate a new bonus scheme that incentivizes the manager to implement the socially optimal risk level.

In this paper an approach to the optimization of the magnetic design of a Permanent Magnet (PM) linear generator for the exploitation of the energy contained in sea waves is presented. This approach consists of a two step procedure: the first one takes into account the stochastic features of the sea wave motion and describe the working condition of the machine under this motion by adopting a lumped parameter model. The synthesis of a hybrid graphene-nickel/manganese mixed oxide and its performance in lithium-ion batteries

[EN] Mixing of aqueous suspensions of delaminated NiMn layered double hydroxide (LDH) and graphene oxide leads to the instantaneous precipitation of a hybrid material that after calcination under inert atmosphere at 450 degrees C leads to Ni6MnO8 nanoparticles deposited on larger reconstituted graphene sheets. This material exhibits electrical conductivity similar to graphite, superparamagnetism and can be used as an anode for Li-ion batteries. Crustal Structure of the Seismogenic Volume of the 2010–2014 Pollino (Italy) Seismic Sequence From 3D P- and S-Wave Tomographic Images

A tomographic analysis of Mt. Pollino area (Italy) has been performed using earthquakes recorded in the area during an intense seismic sequence that occurred between 2010 and 2014. 870 local earthquakes with magnitude ranging from 1.8 to 5.0 were selected considering the number of recording stations, the signal quality, and the hypocenter distribution. P- and S-wave arrival times were manually picked and used to compute 3D velocity models through tomographic seismic inversion. The resulting 3D distributions of VP and VS are characterized by high resolution in the central part of the investigated area and from surface to about 10 km below sea level. [EN] Research in business organization in general and talent management (in university or professional students) uses in many cases self-administered questionnaires as a source of data to assess people's competencies. In clinical psychology, it has been shown that self-evaluations of behaviors may present a bias of social desirability. However, even in this field of research it is not usual to measure its effect when taking data. Our work proposes a protocol to find a set of scales of social desirability (SD) with less than 20 items that are valid and reliable. We also intend to identify if SD scales are associated with the self-assessments of some transversal competences.
