The recirculating aquaculture system (RAS) is an ever-developing technology for producing fish with a low environmental impact. However, off-flavors can be a major problem in RAS fish production. Off-flavor compounds are of microbial origin and are accumulated in fish flesh. They typically cause a musty and earthy taste and odor, which consumers find unacceptable. Woodchip bioreactors are viable low-cost nitrate (NO3−) removal applications for treating agricultural and aquaculture discharges. The active microbial biofilms growing on woodchips are conducting nitrogen (N) removal, reducing NO3− while oxidizing the carbon (C) from woodchips. Fluctuating fishmeal (FM) prices and declining marine fish stocks have led to the current trend of replacing dietary FM with plant proteins (PP) in fish feed. PPs offer challenges both with respect to nutritional quality and the occurrence of antinutrients.
