Structure and composition of model cheeses influence sodium NMR mobility, kinetics of sodium release and sodium partition coefficients
2012
International audience; The mobility and release of sodium ions were assessed in model cheeses with three different lipid/protein ratios, with or without added NaCl. The rheological properties of the cheeses were analysed using uniaxial compression tests. Microstructure was characterised by confocal laser scanning microscopy. (23)Na nuclear magnetic resonance (NMR) spectroscopy was used to study the molecular mobility of sodium ions in model cheeses through measurements of the relaxation and creation times. Greater mobility was observed in cheeses containing a lower protein content and with added NaCl. The kinetics of sodium release from the cheese to an aqueous phase was correlated with th…
The salt and lipid composition of model cheeses modifies in-mouth flavour release and perception related to the free sodium ion content.
2014
Reducing salt and lipid levels in foodstuffs without any effect on acceptability is a major challenge, particularly because of their interactions with other ingredients. This study used a multimodal approach to understand the effects of changes to the composition of model cheeses (20/28, 24/24, 28/20 lipid/protein ratios, 0% and 1% added NaCl) on sodium ion mobility ((23)Na NMR), in-mouth sodium release and flavour perception. An increase in the salt content decreased cheese firmness and perceived hardness, and increased sodium ion mobility, in vivo sodium release and both saltiness and aroma perception. With the same amount of salt, a lower lipid/protein ratio increased the firmness of the…
Myristic acid is associated to low plasma HDL cholesterol levels in a Mediterranean population and increases HDL catabolism by enhancing HDL particle…
2016
Background: HDL-C plasma levels are modulated by dietary fatty acid (FA), but studies investigating dietary supplementation in FA gave contrasting results. Saturated FA increased HDL-C levels only in some studies. Mono-unsaturated FA exerted a slight effect while poly-unsaturated FA mostly increased plasma HDL-C. Aims: This study presents two aims: i) to investigate the relationship between HDL-C levels and plasma FA composition in a Sicilian population following a "Mediterranean diet", ii) to investigate if FA that resulted correlated with plasma HDL-C levels in the population study and/or very abundant in the plasma were able to affect HDL catabolism in an "in vitro" model of cultured hep…
Resting energy expenditure and body composition in morbidly obese, obese and control subjects
1994
Resting energy expenditure (REE) was investigated by indirect calorimetry in relation to body composition and to different degrees of obesity in order to assess if a defective energy expenditure contributes to extra body fat accumulation. Differences were found between control subjects (group C; BMI 23 +/- 0.5 kg/m2, REE 5890 +/- 218 kJ/day; mean +/- SEM) and obese subjects (group O; BMI 34.2 +/- 0.9 kg/m2, REE 7447 +/- 360 kJ/day; P0.0001) and between group C and morbidly obese subjects (group MO; BMI 49.9 +/- 1.6 kg/m2, REE 8330 +/- 360 kJ/day; P0.0001); REE was not significantly different between groups O and MO. Body composition data were obtained by means of body impedance analysis. Ev…
High intensity interval resistance training (HIIRT) in older adults: Effects on body composition, strength, anabolic hormones and blood lipids
2017
The aging process induces significant changes in skeletal muscle morphology and functionality. If not counteracted, this process, termed sarcopenia, can lead to progressively greater disability, frailty and loss of independence. Whilst determining the prevalence of sarcopenia at the population level is complicated by different diagnostic criteria and methodologies used to assess muscle mass, a large percentage of older adults will suffer from this condition in their lifetime (von Haehling et al., 2010). Additionally, longer life expectancy is producing a growing number of elderly individuals worldwide (Beard et al., 2016). Therefore, age-related diseases, such as sarcopenia, are an increasi…
Weight Gain Composition in Preterm Infants with Dual Energy X-Ray Absorptiometry
2001
Whole body composition was investigated using dual energy x-ray absorptiometry in 54 healthy preterm infants, birth weight < 1750 g, who were fed fortified human milk (n = 20) and preterm formula (n = 34) when full enteral feeding was attained and then again 3 wk later at around the time of discharge. Weight gain composition was calculated from the difference between the earlier and later measurement. The minimal detectable changes in whole body composition over time according to the variance of the population (within groups of 20 infants) and the minimal detectable changes according to the dietary intervention (between two groups of 20 infants) were determined at 5% significance and 80% po…
Portulaca oleracea reduces triglyceridemia, cholesterolemia, and improves lecithin: cholesterol acyltransferase activity in rats fed enriched-cholest…
2014
Abstract Purpose The effects of Portulaca oleracea ( Po ) lyophilized aqueous extract were determined on the serum high-density lipoproteins (HDL 2 and HDL 3 ) amounts and composition, as well as on lecithin: cholesterol acyltansferase (LCAT) activity. Methods Male Wistar rats ( n = 12) were fed on 1% cholesterol-enriched diet for 10 days. After this phase, hypercholesterolemic rats (HC) were divided into two groups fed the same diet supplemented or not with Portulaca oleracea ( Po -HC) (0.5%) for four weeks. Results Serum total cholesterol (TC) and triacylglycerols (TG), and liver TG values were respectively 1.6-, 1.8-, and 1.6-fold lower in Po -HC than in HC group. Cholesterol concentrat…
Intercultural Dialogue via Music: Translating the Beatles’ Legacy into Contemporary Pop Culture
2021
Abstract Cultural translation phenomena are per se an intercultural product. Exchange and interaction take place every day in our globalized world. Especially with respect to music, a translational perspective can broaden the horizon of research projects in a very fruitful way. Music always combines elements from different cultures, periods and styles and can, in that way, serve as a medium of intercultural dialogue, which affects the participants of the dialogue not only on a rational, but also on an emotional level – and helps to cross borders and build bridges between different cultures. In my analysis, I take a look at the legacy of the Beatles and how it is performatively unfolded by t…
The Image of Spain as Tourist Destination Built Through Fictional Cinema
2008
Fictional cinema is one of the cultural agents that shapes the international image of each country. It colonizes spectators’ imagery, and it can influence their choice of tourist destinations. Spanish cinema’s international diffusion has allowed the exhibition of movies that spread and renew the image of Spain in different ways. In this respect, we propose a three-fold typology of films focusing our attention on their content and the ways in which they build the image of Spain: Icon Films, Pastiche Films, and Tourist Poster Films. These films may stimulate the increase of a cultural tourism very different from the traditional one that inspired many to come to Spain mainly looking for sunny …
“Just Existing Is Activism”: Transgender Experiences in Martial Arts
2022
This study focuses on transgender experiences in martial arts. Interviews with three Finnish and two British transgender martial artists were thematically analyzed, and findings were interpreted through the lens of queer theory. Two themes were identified related to the ways that transgender martial artists experience their sporting contexts, namely martial arts as an empowering and inclusive context and the challenges related to being transgender in martial arts. Two themes were also identified when it comes to participants’ strategies for coping with cis-/heteronormativity in martial arts. Whenever possible, participants employed social change strategies, whereas other times, they drew on…
