Analysis of pecan nut ([i]Carya illinoinensis[/i]) unsaponifiable fraction. Effect of ripening stage on phytosterols and phytostanols composition

Changes in 4-desmethylsterol, 4-monomethylsterol, 4,4-dimethylsterol and phytostanol composition were quantitatively and qualitatively investigated during the ripening of three varieties of Tunisian-grown pecan nuts (Mahan, Moore and Burkett). These components have many health benefits, especially in lowering LDL-cholesterol and preventing heart disease. The phytosterol composition of whole pecan kernel was quantified by Gas Chromatography-Flame Ionisation Detection (GC-FID) and identified by Gas Chromatography-Mass Spectrometry (GC-MS). Chemometrics as a tool to discriminate geographical origin of Cyperus esculentus L. based on chemical composition

[EN] In the present study the chemical composition of Cyperus esculentus L. (tiger nut) from four distinct geographical origin (Spain, Egypt, Nigeria, and South Africa) was assessed to observe the possible effect of the cultivation site in the fatty acids profile, sterols composition, and squalene and -tocopherol content. It was verified that the individual fatty acids as well as the different fatty acids fractions were severely affected by the geographical origin. Determination of total free amino acids with o-phthalaldehyde and N-acetyl-l-cysteine

Abstract A spectrophotometric procedure is proposed for the determination of total free amino acids after reaction with o-phthalaldehyde and N-acetyl- l -cysteine, using isoleucine as the reference. The procedure was applied to the analysis of five samples of widely different composition. Recoveries were 98–105%.

Ochratoxin A removal in synthetic media by living and heat-inactivated cells of Oenococcus oeni isolated from wines

The capacity of Oenococcus oeni to eliminate ochratoxin A (OTA) from synthetic media in different conditions was studied. Ten tested O. oeni strains removed OTA from the medium but with significant differences depending on the strain, incubation period, and initial OTA level in the medium. Mycotoxin reductions higher than 60% were recorded in 14-day cultures spiked with 2 mu g OTA/l. Toxin removal was independent of bacterial viability and culture medium composition. This is the first study carried out to study OTA removal dynamics by living and heat-inactivated cells of O. oeni. The effect of γ-ketotriazole, MCPA and carbaryl on the lipid composition and ATPase activity associated with plasma membrane fractions from rice (Oryza sativa cv Bahia) shoots was investigated. With γ-ketotriazole and MCPA treatments the relative amount of δ5-avenasterol (%) was reduced in the plasma membrane, whereas with γ-ketotriazole a reduction was also found in the sitosterol content, expressed as a percentage of the total free sterol composition. The fatty acyl chain length of phosphatidylcholine fractions from MCPA-treated plants was also reduced. The plasma membrane Mg2+-ATPase activity was only stimulated in MCPA-treated plants.
