El Llibre d'establiments de la ciutat de València recull les ordenances municipals promulgades pels jurats i el Consell de la capital del regne durant la primera meitat del segle XIV. Hi trobem provisions relatives a tots els aspectes que afectaven la vida de la ciutat, des del proveïment de blat i carn a la higiene pública, l'urbanisme, la defensa, la manufactura i la regulació de la prostitució. The Llibre d'establiments de la ciutat de València (Book of Establishments of the City of Valencia) contains the municipal ordinances enacted by the juries and the Council of the capital of the kingdom during the first half of the 14th century. We find provisions relating to all aspects affecting the life of the city, from the supply of wheat and meat to public hygiene, town planning, defence, manufacturing and the regulation of prostitution.
