Through a wide variety of professions and personalities, food and gastronomy professionals are making their voices heard in the media. More than ever, they must respond to communication issues and put words to their practices, with the conviction that eating is a political, social and ethical act. Behind the media leaders, many actors are asserting their strategic positions and displaying a respectful awareness of people and the environment in order to live and think our food. How to define this commitment, under which horizon of values, which expressive and concrete forms. The notion of commitment is situated within an ecosystem of food life forms, with their social, economic, cultural and symbolic dimensions.
