Several changes of magnesium (Mg) metabolism have been reported with aging, including diminished Mg intake, impaired intestinal Mg absorption and renal Mg wasting. Mild Mg deficits are generally asymptomatic and clinical signs are usually non-specific or absent. Asthenia, sleep disorders, hyperemotionality, and cognitive disorders are common in the elderly with mild Mg deficit, and may be often confused with age-related symptoms. Abstract The study presents the impact of elicitation of basil with 0.01 µM (AA1), 1 µM (AA2) and 100 µM (AA3) arachidonic acid on the content and bioactivity of potentially bioavailable polyphenols. Elevated levels of phenolic compounds correlated with increased biological activity were observed in the extracts from basil (control and elicited) subjected to simulated gastrointestinal digestion in comparison to chemical and standard buffer extracts. Elicitation with AA1 and AA2 resulted in an 3-fold and more than 4-fold increase in the content of potentially bioavailable rosmarinic acid, respectively. Abstract The impact of fermentation assisted by four different lactic acid bacteria (LAB) on polyphenols, carotenoids, organic acids, and antioxidant capacity of orange-juice milk based beverages was evaluated. Lactobacillus brevis POM, and Lactobacillus plantarum (TR-7, TR-71, TR-14) were used to promote the fermentation of the beverages for 72 h at 37 °C. The bacteria population increased with the elapse of fermentation period, except for beverages inoculated with L. plantarum TR-7. Gene-diet interaction in plasma lipid response to plant sterols and stanols: A review of clinical trials

Abstract Plant sterols and stanols (PS) are well known for their cholesterol-lowering effect by reducing intestinal absorption of cholesterol. However, genetic factors modulate the low-density lipoprotein cholesterol (LDL-C) response to PS therapy. This review examines clinical trials evaluating the impact of the main genes associated with response of plasma lipid concentrations to PS intake: APOE, CYP7A1, ABCG5/G8, NPC1L1, CETP, APOA4/A5, SCARBI, HMGCR, PPARα, LIPC, MTHFR and LPA. This thesis carried out a series of cross-cultural studies, France vs. Vietnam, on consumers' representation of soy foods and on sensory perception and preference of soy yogurts, a soy derived product recently developed for French market which does not exist on the Vietnamese market.
