Partition of volatile compounds in pea globulin–maltodextrin aqueous two-phase system

International audience; This study is based on the assumption that the off-flavour of pea proteins might be decreased using the retention of volatile compounds by a mixture with another biopolymer. The partition of volatile compounds in an aqueous system containing pea protein and maltodextrins was followed under thermodynamic incompatibility conditions. Firstly, the phase diagram of the system was established. Then, the partition of aroma compounds between the phase rich in protein and the phase rich in maltodextrin was measured by SPME–GC–MS. Reliability of measurements during countermovement jump assessments: Analysis of performance across subphases

The aim of this study was to examine the reliability of performance measures in the different phases and sub-phases of the countermovement jump (CMJ). Seventeen male athletes competing at a regional level completed 204 valid trails consisting of the execution of maximal hands-on-waist CMJs performed on a force platform. The vertical ground reaction force (VGRF) data obtained at a sampling frequency of 1000 Hz were used to calculate performance-derived variables and determine key points and jump sub-phases. Abstract The structure of [NH(CH3)3]3Sb2Cl9, tris(trimethylammonium) nonachlorodiantimonate(III) (TMACA) has been determined at 295 K and 373 K, below and above the high temperature ferro-paraelectric phase transition. In both phases the anionic sublattice of TMACA is built of characteristic two-dimensional (Sb2Cl93−)n polyanionic layers lying in the bc plane. In room temperature, ferroelectric phase (monoclinic, Pc space group) there are three crystallographically non-equivalent trimethylammonium [NH(CH3)3]+ cations. Multiparameter quantum critical metrology

Single parameter estimation is known to benefit from extreme sensitivity to parameter changes in quantum critical systems. However, the simultaneous estimation of multiple parameters is generally limited due to the incompatibility arising from the quantum nature of the underlying system. A key question is whether quantum criticality may also play a positive role in reducing the incompatibility in the simultaneous estimation of multiple parameters. Vapour partition of aroma compounds in strawberry flavoured custard cream and effect of fat content

International audience; Gas–matrix partition coefficients (k) of volatile compounds of a strawberry flavour added to a complex model system (custard dessert, COST action 921 recipe) were determined. The influence of fat content on the volatility of the strawberry aroma compounds was investigated using full fat milk- (FFM) and skimmed milk- (SM) custards. For the purpose of this study, the phase ratio variation (PRV) method was used because of its easy application for a mixture of volatiles without requiring any calibration. The objective of this study was to identify the existence of significant differences in the field zone of ball possession between successful and unsuccessful teams and to acknowledge if the match status modulates the possession model.
