Tomato peel drying and carotenoids stability of the extracts

Summary Tomato peels were firstly dried by different methods (hot air, freeze-drying, and fluidized bed drying) to evaluate the recovery of lycopene, β-carotene and DPPH radical scavenging activity. Comparison of the results showed that hot air drying at 50 °C was a suitable method and alternative to freeze-drying to preserve carotenoids compounds and antioxidant activity in tomato peels. Then, ethanol/ethyl acetate (1:1) extracts from tomato peel, previously dried at 50 °C by hot air, were submitted to heat (100 °C) and light treatment (1000 lumen) to evaluate their stability as natural food dyes. Effect of Drying Condition on the Quality of Dry Late Peaches of Leonforte

The Late Peach of Leonforte [Prunus persica (L.) Batsch] grown in Southern Italy matures in September and October and as late as November. Fruits are wrapped in paper bags to protect them from parasites and are harvested only when fully ripe. Protected inside the bags, they ripen late and take on a bright yellow colour with red streaks. Highly aromatic, the peach has yellow, firm flesh that is high in soluble solids and has a distinctive, slightly caramelized flavour. Fatty acid composition of the seed lipids ofChamaerops humilisL. natural populations and its relation with the environment

Seed lipids composition is a tool to discriminate among plant taxa and is related to phylogeny and biogeographic distribution. Aim of the present study was to evaluate the fatty acid (FA) composition of the seed lipids from nine natural Chamaerops humilis L. population and its relation with the climatic traits of the collection sites. The average seed lipids content was 54.8 g kg21 and the most represented FAs were oleic (478 g kg21 oil) and linoleic (230 g kg21 oil), with significant differences among the accessions. Effects of different emulsifiers and refining time on rheological and textural characteristics of compound chocolate

The purpose of this study was to investigate the possibility of producing reduced fat dark compound chocolate in the ball mill refiner and using some selected emulsifiers. The effects of selected emulsifiers including lecithin, Polyglycerol polyricinoleate (PGPR) and citrem in two levels and two refining times on the characteristics such as moisture, particle size, hardness and rheological properties of the samples was examined.
