Es wird die Katalyse der Autoxydation des Linolsauremethylesters durch Metallverbindungen und durch verschiedene kombinierte Katalysatorsysteme untersucht. Bei der metallkatalysierten Autoxydation werden die zugesetzten Metallverbindungen nur in Verbindung mit dem entstehenden Substratperoxyd wirksam; ihre katalytische Wirkung beruht auf einer Aktivierung des radikalischen Zerfalls des Substratsperoxydes und der damit verbundenen Steigerung der Autokatalyse der Autoxydation. Es wird eine Methods beschrieben, die den Anfangsverlauf der Autoxydation von substanzen mit niedrigem Dampfdruck (Linolsauremethylester) manometrisch zu verfolgen gestattet. Die Reaktionsgefase sind mit einer Ampullenzertrummerungsvorrichtung ausgestattet, so das die Substanz erst zu einem genau festgelegten Zeitpunkt mit Sauerstoff in Beruhrung gebracht werden kann. Deep-fat frying is a cooking technique that has been used continuously since prehistoric times. A domestic deep-fryer heated from the bottom develops significant convection inside the bath cavity. Aus oxydiertem Linolsauremethylester wurde das Linolsauremethylesterhydroperoxyd durch Gegenstromverteilung isoliert und reinem Linolsauremethylester als Katalysator fur die Autoxydation zugesetzt. Kinetische Versuche zeigen die identische Wirkung des zugesetzten Linolsauremethylesterhydroperoxydes und des Autokatalysators der Spontanreaktion. Methyl linoleate hydroperoxide was isolated from autoxidized methyl linoleate by counter current distribution and was added to pure methyl linoleate as catalyst for its autoxidation. The identical effect of added methyl linoleate hydroperoxide with the autocatalyst of the autoxidation reaction is demonstrated by kinetic experimetns.

S-nitros(yl)ation belongs to the redox-based posttranslational modifications of proteins but the underlying chemistry is controversial. In contrast to current concepts involving the autoxidation of nitric oxide ( • NO, nitrogen monoxide), we and others have proposed the formation of peroxynitrite (oxoperoxonitrate (1-)) as an essential intermediate. This requires low cellular fluxes of 'NO and superoxide ( • O 2 - ), for which model systems have been introduced. The tris[oligo(1,4-phenylenevinylene)]carbinols 2a–f (n =1–4) and the tris(4-styrylphenyl)methanes 7a,b have been prepared by Wittig–Horner (3 + 4a–f 2a–f) and Siegristreactions (5 + 6a,b 7a,b). The Wittig–Horner reactions in these examples are accompanied by an autoxidation, whereas a reduction occurs in the Siegrist reactions. Compound 2a, the lowest member (n = 1) of the series 2a–d with terminal dialkylamino groups, generates first, on treatment with acids, the methylium dye 2′a, which absorbs far into the NIR region (λmax = 1100 nm). The chapter reviews several studies carried out by incorporating a variable proportion of all- trans -retinol and α-tocopherol in soybean phosphatidylcholine liposomes. It discusses the antioxidant effectiveness of all- trans - retinol in retinal membranes, whether deprived of endogenous α-tocopherol. In the experiments discussed in the chapter, synergistic effects between all- trans -retinal and α -tocopherol are evident in chemical bilayer as well as in natural membranes.
