In the last decades, berries have been identified as important vehicles for the transmission of foodborne viruses and different strategies are being explored to eliminate or reduce viral contamination in these fruits. The aim of this work was to develop novel edible coatings with antiviral properties for inactivating and reducing murine norovirus (MNV). Firstly, the effect of gelatin (G) addition on Persian gum (PG) films was studied in terms of microstructural, mechanical, optical, and water barrier properties. Optimised method for the analysis of phenolic compounds from caper (Capparis spinosa L.) berries and monitoring of their changes during fermentation

In this work, an ad hoc method to identify and quantify polyphenols from caper berries was developed on high-performance liquid chromatography/electrospray ionisation source/mass spectrometry (HPLC-ESI-MS). The method was applied during fermentation carried out with Lactobacillus pentosus OM13 (Trial S) and without starter (Trial C). A total of five polyphenols were identified. All samples contained high concentrations of rutin. Epicatechin was found in untreated fruits, on the contrary quercetin was detected during fermentation. The Quality Perception of Fresh Berries: An Empirical Survey in the German Market

AbstractThe present work aimed to investigate the main quality attributes that influence the purchase decisions of fresh berries. To this regard, an empirical survey has been conducted by interviewing 200 consumers of fresh berries at the exit of the main centers of the large scale retail trade in the city of Munich (Germany). An econometric model has been adopted to examine the relationship that single attributes has on the purchase frequency of fresh berries. Results showed that nutraceutical properties and health benefits of berries have a strong appeal to the consumers and confirmed that intrinsic attributes are determinants of consumer purchase decision

Sambucus nigra L. (Caprifoliaceae) is wide spread in temperate and sub-tropical zones. The consumption of its berries has been associated with health benefits especially for its high content of natural antioxidants such as polyphenols, in particular anthocyanins. In this work we investigated the polyphenolic composition and the in vitro antioxidant activities (ABTS, DPPH, BCB and FRAP-ferrozine (FRAP-FZ) assays) of S. nigra berries, collected in four different Sicilian areas (Italy). These plant foodstuffs provided humans with minerals, vitamins and nutrients essential for optimal health.
