The cocoa varieties Criollo, Forastero and Trinitario, which have different organoleptic properties, quite often are mixed together in cocoa-based products. The objective of this work was to develop a rapid method for the simultaneous determination of polyphenols (n = 35) and alkaloids (n = 2) in cocoa-based products by using the high throughput advantages provided by the Q Exactive Hybrid Quadrupole-Orbitrap Mass Spectrometer (FIRMS). The proposed procedure was optimized and validated in terms of selectivity and specificity (mass accuracy 0.990), accuracy (recovery range from 89.1 to 112.4%) and precision (relative standard deviation < 10%). Microencapsulation of Phenolic Extracts from Cocoa Shells to Enrich Chocolate Bars

AbstractCocoa bean shells were subjected to green extraction technologies, based on the absence of toxic organic solvents, to recover polyphenols; the extract was then encapsulated using a spray dryer and maltodextrin as coating agent. The best conditions observed in the spray drying tests (core-to-coating ratio 1:5; inlet temperature 150 °C; flow rate 6 ml min−1) were applied to produce the microcapsules used to enrich the same cocoa mass as the shells and processed for the preparation of the chocolate bars. Oral health status in patients with moderate-severe and terminal renal failure.

Aims. To evaluate the oral health status of patients with moderate-severe chronic renal failure (CRF) and with terminal renal failure (TRF). Design. The study group was formed of 50 patients: 22 (44%) with moderate-severe CRF and 28 (56%) with TRF included in a haemodialysis programme. The controls (n=64) presented similar characteristics with regard to sex, age, weight and educational level. A single dentist performed an intraoral examination on all the subjects, gathering information on: number of decayed, missing or filled teeth; supragingival plaque accumulation; calculus deposits; periodontal pockets in the Ramfjord teeth; and loss of insertion. We studied a polyphenol-enriched cocoa extract (PCE) with epicatechin, procyanidin B2, catechin, and procyanidin B1 as the major phenolics for its anti-inflammatory properties against dextran sulfate sodium (DSS)-induced ulcerative colitis (UC) in mice. PCE reduced colon damage, with significant reductions in both the extent and the severity of the inflammation as well as in crypt damage and leukocyte infiltration in the mucosa. Analysis ex vivo showed clear decreases in the production of nitric oxide, cyclooxygenase-2, pSTAT-3, and pSTAT1α, with NF-κB p65 production being slightly reduced. Effectiveness of clays and copper products in the control of Bactrocera oleae (Gmelin)and Ceratitis capitata (Wiedemann) in organic farming

Tests on the effect of clays (kaolin and bentonite) and copper products (hydroxide and oxychloride) in the control of olive fruit fly, Bactrocera oleae (Gmelin), and Mediterranean fruit fly, Ceratitis capitata (Wiedemann), were carried out from 2003 to 2006 in olive groves, and in 2005 and 2006 in organic orange orchards (early ripening cv. Navelina). Results demonstrate an efficacy of kaolin products in reducing attacks of Bactrocera oleae to olives and those of Ceratitis capitata to oranges. Two years (2008-2009) field observations were carried out to evaluate the effects of altitude, of kaolin application and of early leaf thinning practice on the infestation level and damages caused by grape moth Lobesia botrana. The difference of 80 m. a.s.l. significantly influenced the infestation level of grape moth, which was lower, of about 20%, at the higher altitude. The early leaf thinning practice did not influence the grape moth infestation nor the presence of sour bunch rot and grey mould on grapes. Abstract: A novel dairy product, namely “chocolate cheese”, was produced with two typical Sicilian food products: Pecorino cheese, processed from ewe's milk, and Modica chocolate. The cheese, manufactured with 0%, 5%, 10%, and 15% (w/w) solid or molten chocolate, was evaluated after 0, 2, 4, and 6 weeks of vacuum storage for its nutritional and health properties. The addition of chocolate reduced the pH, protein, fat, and ash; the addition of 5% or 10% molten chocolate reduced hardness (N/mm2). La città di Alcamo (in provincia di Trapani) è stato uno dei luoghi dove la resistenza al classicismo e la sopravvivenza del gotico si sono protratte a lungo, travalicando la metà del XVI secolo con l'esperienza di artefici di provenienza esterna e di formazione tradizionale ma aperti a un ventaglio di possibili alternative, disponibili a incamerare opzioni diverse o ad utilizzare indifferentemente i due linguaggi.
