Changes in Levels of a-Tocopherol and Ascorbate in Spruce Needles at Three Low Mountain Sites Exposed to Mg2+-Deficiency and Ozone

The main objective of this study was the com parison of changes in levels of α-tocopherol and ascorbate in needles of spruce trees with various degrees of damage at three low mountain sites. The ascorbate content in needles of spruce trees with various degrees of dam age differs in the course of seasons as well as in the absolute level. The antioxidant status was affected mainly during summer. The content of ascorbate in needles of dam aged trees was significantly increased compared to that of undamaged trees. Despite seasonal and daily fluctuations, the level of ascorbate seems to be a good indicator for the degree of dam age in the case of symptoms described as montane yellowing. Together…

Micro-hydrogels are very promising systems for the protection and controlled delivery of sensitive bioactives, but limited knowledge exists regarding the impact of this encapsulation on their bioaccessibility. In this work, two different hydrogel-forming biopolymers (gelatin and chitosan) were compared as wall materials for the microencapsulation of a model flavonoid, (−)-epigallocatechin gallate (EGCG). Plant Sterols and Antioxidant Parameters in Enriched Beverages: Storage Stability

Plant sterols (PS) stability, antioxidant parameters, and color were studied during 6 months of storage at 4, 24, and 37 °C in three PS-enriched functional beverages. Beverages were skimmed milk with fruit juice and PS (MFJPS), fruit juice and PS (FJPS), and skimmed milk with PS (MPS). No loss in total PS content occurred during storage observing the same values at any given storage time point. Total carotenoids decreased 36% with storage at two months and then remained stable. In a broad survey conducted throughout the Sicily region, 45 different sites were identified where thyme grows wild. All the biotypes collected were classified as Thymbra capitata (L.) Cav. (syn. Thymus capitatus (L.) Hoffmanns. & Link). Cluster analysis based on the main morphological characteristics of the plant led to the division of the biotypes into 3 major groups. All samples were analyzed for their secondary phytochemical metabolites identified in the extracts and the essential oils.
