indexation en cours; PURPOSE OF REVIEW: The current review summarizes and discusses current knowledge on sweeteners and sweetness enhancers. RECENT FINDINGS: The perception of sweet taste is mediated by the type 1 taste receptor 2 (T1R2)/type 1 taste receptor 3 (T1R3) receptor, which is expressed in the oral cavity, where it provides input on the caloric and macronutrient contents of ingested food. This receptor recognizes all the compounds (natural or artificial) perceived as sweet by people. Sweeteners are highly chemically diverse including natural sugars, sugar alcohols, natural and synthetic sweeteners, and sweet-tasting proteins. Antiprotozoal and cysteine proteases inhibitory activity of dipeptidyl enoates

A family of dipeptidyl enoates has been prepared and tested against the parasitic cysteine proteases rhodesain, cruzain and falcipain-2 related to sleeping sickness, Chagas disease and malaria, respectively. They have also been tested against human cathepsins B and L1 for selectivity. Dipeptidyl enoates resulted to be irreversible inhibitors of these enzymes. Some of the members of the family are very potent inhibitors of parasitic cysteine proteases displaying k2nd (M−1s−1) values of seven orders of magnitude. Colour as a driver of Pinot noir wine quality judgments: An investigation involving French and New Zealand wine professionals

Despite anecdotal reports suggesting an influence of perceived wine colour on wine professionals’ judgments of wine intrinsic quality, there is a lack of empirical evidence on the phenomenon. The major aim of the present study was to investigate the importance of perceived colour as a driver of chemosensory judgments of Pinot noir wines including sensory evaluations of quality and typicality. A promising alternative to classical antibiotics are antimicrobial peptides and their synthetic mimics (smAMPs) that supposedly act directly on membranes. For a more successful design of smAMPs, we need to know how the type of interaction with the membrane determines the type of membrane perturbation. Validity and reliability of the motivation for physical activity (RM4-FM) questionnaire

There is a lack of validated instruments measuring motivation for physical activity (RM4-FM) in the Finnish language. The study examined the translated RM4-FM instrument’s psychometric properties in a sample of healthy, older Finnish adults. RM4-FM was translated and linguistically validated adhering to published guidelines. 65–75-year olds (n=102), completed the RM4-FM, the physical activity acceptance questionnaire (PAAQ) and sociodemographic characteristics questionnaires electronically. Biochemical and nutritional traits of sea bass (Dicentrachus labrax) from different rearing systems

Farmed European sea bass (Dicentrarchus labrax), sampled from three different culture systems (intensive in sea-cages, intensive in land-based basins and extensive in lagoon and storage basins of salt-work), of the Northern, Central and Southern Italy, were analyzed with the aim to employ nutritional trait to describe and to distinguish the “origin” of the product. Lipid and fatty acid profile, strongly affected by the feeding history and environmental factors, responsible of the nu- tritional and perceived quality of fish product, are proposed as marker of origin.

Relationships among residents' image, evaluation of the stay and post-purchase behaviour

Scholars have approached the analysis of the host community from a supply perspective rather than a demand one. This paper focuses on the study of residents when acting as tourists in their own region. In this sense, the present work aims to fill the gap existing in the literature about residents' tourist behaviour, analysing the influence of the image of their province on their evaluation of their travel experience and their future behaviour intentions. To accomplish this objective, a path analysis is carried out to test jointly the set of relationships among image, perceived quality, satisfaction, intention to return and willingness to recommend.
