“Framboisé” spoilage in French ciders: Zymomonas mobilis implication and characterization

Abstract Biodiversity of 17 Zymomonas mobilis strains isolated from French “framboise” ciders from 7 different geographical areas of France was analysed using random amplified polymorphic DNA (RAPD) and 6 different strain fingerprints were observed. One of the fingerprints was identical for 10 of the 17 cases. No correlation between geographical origin and strain fingerprint was observed. In parallel, the cider-making process was followed from the orchard to the final product for Z. mobilis presence. Detection of the bacterium only occurred during the fermentation process. Moiety and linker site heterologies for highly sensitive immunoanalysis of cyprodinil in fermented alcoholic drinks

Cyprodinil is a new-generation anilinopyrimidine fungicide widely used in crop protection and frequently found in fruits. In this study, novel derivatives of cyprodinil with linker site heterologies were synthesized and employed in order to produce antibodies with enhanced affinity. Moreover, moiety-heterologous haptens were designed and prepared for assay sensitivity improvement. Two competitive enzyme-linked immunosorbent assays for the analysis of this active substance were developed using direct and indirect formats, achieving IC50 values around 0.15 μg/L. Proteomic fingerprinting of apple fruit, juice, and cider via combinatorial peptide ligand libraries and MS analysis

Combinatorial peptide ligand libraries coupled to MS was applied to extensively map the proteome of apple fruit, and to detect its presence in commercial apple juice and cider to evaluate their authenticity and genuineness. Using the Uniprot_Malus database, 96 proteins were detected in apples, among which 30 proteins were specifically captured via combinatorial peptide ligand libraries. Next, three proteins, previously recognized in fruits, were found in apple juice, which were involved in cellular metabolism of fruit maturation and in allergenic reactions.
