Differentiation among dairy products by combination of fast field cycling NMR relaxometry data and chemometrics

A set of commercial milk and Sicilian cheeses was analysed by a combination of fast field cycling (FFC) nuclear magnetic resonance (NMR) relaxometry and chemometrics. The NMR dispersion (NMRD) curves were successfully analysed with a mathematical model applied on Parmigiano-Reggiano (PR) cheese. Regression parameters were led back to the molecular components of cheeses (water trapped in casein micelles, proteins and fats) and milk samples (water belonging to hydration shells around dispersed colloidal particles of different sizes and bulk water). Abstract Background Despite the reported high prevalence of osteoporosis in the human immunodeficiency virus (HIV)-population, there have been no previous studies examining dairy calcium intake and bone mineral density (BMD) in HIV-subjects. We assessed the prevalence of low BMD in HIV-infected and uninfected subjects and analyzed the effects of calcium intake, lifestyle and HIV-related risk factors on BMD. Perception des adventices par les agriculteurs, conseillers, techniciens d’expérimentation et chercheurs en France

Une enquête nationale ayant recueilli 1320 réponses (839 analysées dans cet article), dont 56% d'agriculteurs, 26% de conseillers, 14% de techniciens/expérimentateurs et 4% de chercheurs, a permis de sonder leur perception des adventices. Les effets positifs des adventices ont moins d’importance aux yeux des sondés que leurs effets négatifs. Pour les effets négatifs, la perte de rendement (nuisibilité primaire directe) et l’augmentation du stock semencier (nuisibilité secondaire) sont les plus importants. Red grape Nero d’Avola cultivar grape pomace powder (GPP) was applied during fresh ovine cheese production in order to increase polyphenol content. Before cheeses were produced, the bacteria of a freeze-dried commercial starter culture were isolated and tested in vitro against GPP. Two dominant strains, both resistant to GPP, were identified. This experiment aimed to verify the effects of a concentrate supplement based on barley and tickbean (BT), compared with a concentrate of maize and extruded soybean meal (MS), on milk and cheese yield and composition of ewes grazing with different stocking rate (SR). Thirty two Comisana ewes, divided into four groups, for 50 days in spring were allowed to graze plots of a mixed sward of Italian reygrass and berseem clover with a low (LSR, 23 ewes/ha) or a high SR (HSR, 38 ewes/ha) and fed BT or MS. Herbage allowance per ewe was more than double at LSR compared to HSR (P<0.001), and daily milk yield was 10 to 15% higher (P<0.01) in the LSR-BT ewes than in the other groups. Milk composition, …

Varying plant protein sources in the diet of sea bass Dicentrarchus labrax differently affects lipid metabolism and deposition

The liver activity of lipogenic enzymes, the lipid content in various tissues, and plasma lipid levels of major, were measured in sea bass (D. labrax) fed over 96 days either a, fish meal-based control diet or preparations where 70% of fish meal protein was replaced by wheat gluten singly or in combination with pea or soybean meals. Relative to the controls, sea bass fed the wheat gluten-based diet resulted in stimulated lipogenesis in liver and increased lipid deposition in muscle.
