Mediterranean areas with intensive agriculture are characterized by high salinity of groundwater. The use of this water in hydroponic cultivations can lead to nutrient solutions with an electrical conductivity that overcomes the tolerance threshold of many vegetable species. 1. Large herbivores influence plant community structure and ecosystem processes in many ecosystems. In large parts of the Arctic, reindeer (or caribou) are the only large herbivores present. Recent studies show that reindeer have the potential to mitigate recent warming-induced shrub encroachment in the Arctic and the associated greening of high-latitude ecosystems. This study investigates the seed oils obtained from two different varieties of Opuntia ficus-indica (Sanguigna and Surfarina) growing in Sicily, Italy. Soxhlet and ultrasound-assisted extraction procedures are used to obtain the seed oils. The fatty acid profile, γ-tocopherols, carotenoid content, and the bioactivity in terms of the antioxidant effects (using ABTS, DPPH, FRAP, and β-carotene bleaching tests), and carbohydrate-hydrolysing enzyme inhibitory activity (α-amylase and α-glucosidase) are determined. Summary Background Cholesterol microbial transformation has been widely studied using in vitro fermentation assays, but less information is available on the biotransformation of plant sterols (PS). The excretion percentage of animal sterols (AS) (67–73%) is considerably greater than that of PS (27–33%) in feces from healthy humans following a Western diet. The aim of this study was to examine the long-term effect on toddlers’ fruit and vegetable intake and sweet beverages, and skepticism for new food, of a 2-days’ intervention on how to prepare homemade food for toddlers.
