Pectin concentration, Molecular Weight and Degree of Esterification : Influence on Volatile Composition and Sensory Characteristics of Strawberry Jam

Composition of headspace, consistency, taste and flavor characteristics were determined in jams made with different pectins. At usual concentrations, high methoxylated pectin induced an undesirable modification of typical flavor and intensity of flavor and taste, whereas low methoxylated pectin induced few alterations. At fixed concentration and molecular weight, a decrease in degree of esterification produced a significant decrease in consistency and noticeable modifications of the flavor perception and headspace composition, but no taste alteration. Mechanical reduction of pectin molecular weight significantly modified only the consistency.

Titanium and its alloys provide optimum metallurgical properties for implants. The formation of an oxide layer favours compatibility with the adjacent hard and soft tissues. Research focuses on further optimizing the passive layer, particularly with respect to minimizing metal ion migration into the tissues. The slow thermal degradation of various black liquors and their organic components (lignin, aliphatic carboxylic acids, extractives and polysaccharides) was investigated by thermogravimetry in the temperature range 25–700 °C under an inert nitrogen atmosphere and at a heating rate of 20 °C/min. Oven-dried samples of pine and birch black liquors from kraft and soda-anthraquinone pulping were tested. Bacterial infections on a sutured wound represent a critical problem, and the preparation of suture threads possessing antimicrobial properties is valuable. In this work, poly(caprolactone) (PCL) monofilaments were compounded at the concentration of 1, 2 and 4 % (w/w), respectively, to the antiseptic chlorhexidine diacetate (CHX). The incorporation was carried out in the melt by a single-step methodology, i.e. “online” approach. Mechanical tests revealed that the incorporation of CHX does not significantly change tensile properties of PCL fibres as the thermal profile adopted to prepare the compounded fibres does not compromise the antibacterial activity of CHX.
