Microgreens constitute an emerging class of fresh, healthy foods due to their nutritional composition. Enhancing Bioactive Antioxidants’ Extraction from “Horchata de Chufa” By-Products

During the production of a traditional drink produced from the tubers of Cyperus esculentus L. also known as “horchata de chufa,” a high quantity of by-products are generated. These by-products are rich with valuable biological compounds, hence, there is a need to report their extraction conditions for further use in food production as raw materials. Development of "Quadrello di Ovino", a Novel Fresh Ewe's Cheese.

This work was performed to produce a new soft ewe’s milk cheese, namely “Quadrello di ovino” (QdO) cheese, to enlarge ewe’s dairy product portfolio of South Italy, barely limited to Pecorino cheese typology. Cheese making was performed applying the technology for “Crescenza” cheese typology with some modifications. In particular, pasteurized ewes’ milk was inoculated with two commercial starter formulations (SF1 and SF2) of Streptococcus thermophilus to obtain two different productions (QdO-P1 and QdO-P2, respectively). In this article we report the findings of a critical discourse analysis of the diagnostic criteria for attention deficit hyperactivity disorder (ADHD) and hyperkinetic disorder (HD) in two clinical manuals – Diagnostic and Statistical Manual of Mental Disorders, 5th edition and International Classification of Diseases, 10th edition. We examine the actions (behaviors) that are said to indicate the presence of ADHD/HD and analyze what the inclusion of these actions reveals about the relationship between ADHD/HD, cultural knowledge, and values.
