Esta Tesis Doctoral se centra en primer lugar en la utilización de la fermentación con bacterias ácido-lácticas aisladas de pescado para la obtención de compuestos antioxidantes y antifúngicos a partir de subproductos de pescado. Se identificaron ácidos fenólicos como el ácido DL-3-fenil-láctico y el ácido benzoico tras fermentar caldos elaborados con carne de pescado y subproductos durante diferentes tratamientos. The reduction of the number of road accident fatalities by 50 %, by the year 2010, suggested by the EU, involves the active contribution of all the agents in charge of the road safety in Europe.
