This work studies specific interactions between a small globular protein and a highly flexible, branched polysaccharide using differential scanning calorimetry (DSC), circular dichroism (CD), fluorescence, and turbidimetry measurements. It uses the system water/bovine serum albumin (BSA)/dextran (D 2000) as a model. Dextran molecules are able to form interpolymeric complexes with BSA in water at both low and high temperatures if the polysaccharide is in excess and if the protein exists in its associated state. Abstract Glycoconjugated aroma precursors from neutral grape varieties were fractionated on 5 g C18 RP cartridge. Each of the seven fractions collected was divided in three parts: first part was hydrolysed with Pectinol in order to determine total aromatic heterosides, while the second part was treated with an active strain of the yeast Saccharomyces cerevisiae UCLM 325 and the third part with acetonic powder of the same yeast strain. The studied strain proved effective in the hydrolysis of the heterosides of nerol and geraniol, cis-8-hydroxy-linalool, 8-hydroxy-dihydro-linalool, some benzenoids and some norisoprenoids derivatives such as vomifoliol and 3-oxo-α-ionol. Saccharomyces cerevisiae signature genes for predicting nitrogen deficiency during alcoholic fermentation

Genome-wide analysis of the wine yeast strain Saccharomyces cerevisiae PYCC4072 identified 36 genes highly expressed under conditions of low or absent nitrogen in comparison with a nitrogen-replete condition. Reverse transcription-PCR analysis for four of these transcripts with this strain and its validation with another wine yeast strain underlines the usefulness of these signature genes for predicting nitrogen deficiency and therefore the diagnosis of wine stuck/sluggish fermentations.

The aim of this review is to provide newest results in the chemistry, pharmacology, and clinical studies of saponins-containing TCM drugs, some of them being listed in the Chinese Pharmacopoeia. It appears that literature on triterpene saponins is more abundant than that of steroid saponins, and ginseng occupies a prominent position in the list. However, other TCM drugs are well documented in recent years belonging to the genera Astragalus, Gynostemma, Bupleurum, Clematis, Dipsacus, Platycodon, Gypsophila, Anemarrhena, Lonicera, Paris, Dioscerea, Tribulus, and Ophiopogon. The mucus produced by many marine organisms is a complex mixture of proteins and polysaccharides forming a weak watery gel. It is essential for vital processes including locomotion, navigation, structural support, heterotrophic feeding and defence against a multitude of environmental stresses, predators, parasites, and pathogens.
