Data la numerosità dei genotipi di papaia coltivati in Sicilia si è resa necessaria una caratterizzazione qualitativa degli stessi. In questo studio sono stati confrontati, da un punto di vista pomologico, chimico-fisico, nutraceutico e sensoriale, i frutti di 5 differenti genotipi di papaia nell’ottica di individuarne e definirne qualità e rispondenza per il mercato locale ed europeo.

“Pesca di Bivona” ‘Murtiddara’, ‘Bianca’, ‘Agostina’, and ‘Settembrina’ are non-melting white flesh peach landraces characterized by a persistent aroma and excellent flavour highly appreciated by Italian consumers. The aim of this work was to assess the persistence of their quality and sensory profiles after storage at 0 °C for 28 days, using destructive and non-destructive analyses. Application of passive modified atmosphere packaging (MAP) for shelf life extension of mixed pineapple slices, mango pieces and orange segments, was evaluated. Fruits of Ananas cv ‘Gold’, Mango cv ‘Keitt’ and Orange cv ‘Washington Navel’ were washed, sanitized, peeled and cut. The influence of flesh firmness on consumer acceptance and its relationship with total soluble solids concentration (TSSC), titratable acidity (TTA) and sensory analysis was studied to understand their interaction in determining acceptance judgments, for different organoleptic typologies of peaches and nectarines. I frutti, tipiche more di colore bianco violaceo o nero, sono molto apprezzati dall'uomo sin dall'antichità, sebbene vengano spesso collocati tra i frutti minori per la loro scarsa diffusione commerciale.
