Analysis of phytosterols in foods

2006

Phytosterols are bioactive compounds, one of their most studied and outstanding properties being their cholesterol-lowering activity. This explains the growing interest in the phytosterol contents of foods as either intrinsic or added components. The different steps (extraction, saponification, clean up, chromatographic determination) of plant sterol determination are reviewed, and emphasis is placed on the methods used to assay different phytosterols in food.

This study aims to identify the typology and patterns of hoaxes related to health and nutrition disseminated during the first stage of the COVID-19 pandemic (March-November 2020). To do this, an exploratory quantitative study was carried out with two data types. The determination of two secondary lipid oxidation compounds (hexanal and pentane) in liquid infant foods using a headspace solid-phase microextraction gas chromatographic (HS-SPME-GC) method has been developed and validated. The HS-SPME analytical conditions (fibre position, equilibration and sampling times) were selected. The analytical parameters of the method (linearity: hexanal from 2.48 to 84.78 ng/g, pentane from 6.21 to 79.55 ng/g; precision: hexanal 2.87%, pentane 2.343.46%; recovery: hexanal 106.60%, pentane 95.39%; detection limit: hexanal 3.63 ng and pentane 4.2 ng) demonstrate the usefulness of the method. Functional implications of bound phenolic compounds and phenolics–food interaction: A review

Sizeable scientific evidence indicates the health benefits related to phenolic compounds and dietary fiber. Various phenolic compounds-rich foods or ingredients are also rich in dietary fiber, and these two health components may interrelate via noncovalent (reversible) and covalent (mostly irreversible) interactions. El rol de los directores escolares es clave para movilizar la mejora de los centros escolares. A través de un enfoque cualitativo-longitudinal utilizando la técnica thin-slice, este artículo examinó la calidad de las prácticas asociadas con la observación en el aula y la retroalimentación proporcionada por 10 directores nóveles al final de su primer y su segundo año en el cargo. It increases the risk of dyslipidemia, hypertension, and type 2 diabetes, which are known cardiometabolic risk factors and components of the metabolic syndrome. Scientific studies on writing in second language learning (2005-2017)

Este artículo revisa críticamente las líneas temáticas que desde 2005 hasta 2017 se han publicado sobre Second Language Writing (SLW) con el objetivo de presentar un análisis de las tendencias predominantes en las publicaciones indexadas en SCOPUS. Como metodología de estudio se ha procedido a la selección de aquellas contribuciones que han recibido 60 citas o más. Towards a more sustainable food Supply chain: opening up invisible waste in food service

Future challenges to the global food supply chain are complex. In order to embrace sustainability, companies should change their management practices towards more efficient resource use. Food waste being a misuse of resources, we identify its causes and possible ways of minimising it. To achieve this goal, we conducted explorative research with qualitative and quantitative data through in-depth semi-structured interviews and an open questionnaire with top Spanish food service companies.
