This chapter presents a review of the scientific literature on the use of vibrational spectroscopy, near-infrared (NIR), mid-infrared (mid-IR), and Raman, for the analysis of caffeine, sweeteners, and other additives in beverages and related products. Direct analysis procedures of coffee and tea, for both classification according to precedence or variety and quantitative determination of caffeine, are available. For beverage analysis, caffeine has been determined by direct attenuated total reflection (ATR) measurement or by transmission spectroscopy in the mid-IR region after extraction with chloroform. Coffee and Anxiety

Abstract This chapter discusses the effects of coffee consumption on anxiety response, taking into account vulnerability factors such as sex and genetics. In light of research concerning the effects of coffee on normal anxiety, and particularly research carried out in our laboratory, current knowledge can be summarized as follows: (1) men appear to be more sensitive to the effects of coffee than women; and (2) coffee can increase alertness in habitual consumers after acute deprivation, but not above the level of that observed in nonconsumers. Caffeine increases the expression of cystatin SN in human submandibular acinar-like HSG cells

The study aimed at evaluating in vitro the effect of caffeine on expression of cystatin SN, a potential marker of sensitivity to bitterness in humans.Differentiation of human submandibular gland (HSG) cells was induced by culturing cells on Matrigel. Caffeine cytotoxicity was assessed over 3 days by the Resazurin test. Finally, effects of 5, 50 and 100μM caffeine exposure on cystatin SN expression were explored over 3 days by ELISA.At concentrations relevant to human adult plasma levels (5, 50 and 100μM), caffeine did not affect cell viability whether cells were differentiated or not. Gender Differences in the Frequency of Positive and Negative Effects after Acute Caffeine Consumption

Gender-specific caffeine-related adverse effects should be thoroughly investigated. Sixty-five adult participants were included in the study, 30 men and 35 women (age, 22.5 ± 2.8; body weight, 71.7 ± 16.2 kg; BMI, 23.6 ± 4.4). The participants who were classified as low and moderate caffeine users received 3 mg/kg, and high caffeine users received 6 mg/kg of caffeine in one dose.
