Pectin concentration, Molecular Weight and Degree of Esterification : Influence on Volatile Composition and Sensory Characteristics of Strawberry Jam

Composition of headspace, consistency, taste and flavor characteristics were determined in jams made with different pectins. At usual concentrations, high methoxylated pectin induced an undesirable modification of typical flavor and intensity of flavor and taste, whereas low methoxylated pectin induced few alterations. At fixed concentration and molecular weight, a decrease in degree of esterification produced a significant decrease in consistency and noticeable modifications of the flavor perception and headspace composition, but no taste alteration. Mechanical reduction of pectin molecular weight significantly modified only the consistency.

Perceived minerality in sauvignon blanc wine: chemical reality or cultural construct?

We investigated the sensory properties and chemical composition of sauvignon blanc wines from two major sauvignon-producing countries, New Zealand and France. Sensory experiments employing 16 wines (8 French, 8 New Zealand) were conducted in Marlborough, New Zealand and in three regions of France, namely Bordeaux, Burgundy, and the Sancerre/Loire region. The Moderating Role of Performance in the Link From Interactional Justice Climate to Mutual Trust Between Managers and Team Members.

The main goal of this study was to examine the interaction between team members’ performance and interactional justice climate in predicting mutual trust between managers and team members. A total of 93 small centers devoted to the attention of people with intellectual disability participated in the study. In each center, the manager ( N = 93) and a group of team members ( N = 746) were surveyed. On average, team members were 36.2 years old ( SD = 9.3), whereas managers were 41.2 years old ( SD = 8.8). This qualitative case study describes a case in which high social cohesion led to a deterioration in a team's performance. The aim of the present study was to investigate the relationships between performance in a team sport and social psychological group phenomena such as cohesion, conformity, groupthink, and group polarization. Empowering team leadership and safety performance in nuclear power plants: A multilevel approach

Abstract Despite the large body of work on team leadership, hardly any literature has dealt with team leadership in safety performance settings. The goal of the present study is to analyze how team leader behaviors influence team members’ safety performance in nuclear power plants. A person-environment-fit-model for temporary organizations - Antecedents for temporary working settings

Abstract Projectification has led to the widespread use of temporary organizations (TOs) in many industries, but the various factors that determine successful work by employees in TOs are unexplored. Testing relations between group cohesion and satisfaction in project teams: A cross-level and cross-lagged approach

Based on a two-dimensional perspective of group cohesion, this study examines the emergence of task cohesion and interpersonal cohesion in project teams and their roles in changes in members’ individual satisfaction with the team. Specifically, we tested a direct-effect and mediation model of the cross-level relationship between team task and interpersonal cohesion and individual satisfaction with the team over time.
