Abstract The purpose of this work is to identify and analyze consumer resistance in order to understand this concept in the area of resistant behavior. The paper converges on studying the resistance to innovation from a theoretical perspective and to show it importance in innovation process. The paper concludes bydescribing the complexity of resistance to innovation, its forms and effects on the behavior of consumers and market. Although most authors focus their research on positive adoption decisions, this paper instead focus on developing insight into the relatively underdeveloped area of resistant behavior literature by presenting key concepts of resistance to innovation.

Memory plays a fundamental role in the acquisition of food likes and dislikes. As a consequence, a better understanding food memory will contribute to a better understanding food choice and behavior. This work sets out several experiments based on a common recognition paradigm: during a first session, participants are exposed to the food to be remembered (target) under conditions ensuring incidental learning. Linking functional and relational service quality to customer satisfaction and loyalty: differences between men and women.

This study assessed differences between men and women in the association of perceptions of service quality with customer evaluations. Functional (efficiency with which the service is delivered) and relational (customers' emotional benefits, beyond the core performance, related to the social interaction of customers with employees) dimensions of service quality were measured as well as customer satisfaction and loyalty. The sample of 277 customers (191 men, 86 women), surveyed in 29 Mexican hotels, had a mean age of 38.1 yr. ( SD = 9.7) for men and 34.5 yr. ( SD = 11.0) for women. Cruise passengers' trajectories at destination. A Dynamic Time Warping approach.

The present work aims at proposing an analysis of cruise passengers trajectories at the destination through Dynamic Time Warping algorithm. Data collected through GPS devices on cruise passengers’ behavior in the port of Palermo are analyzed in order to show similarities and differences among their spatial trajectories at the destination. A cluster analysis is performed in order to identify cruise passengers’ segments based on trajectories’ similarity. Results are of interest from both a methodological perspective related with the analysis of GPS data, and for the management and planning of cruise tourism destinations.

Fat and salt contents affect the in-mouth temporal sodium release and saltiness perception of chicken sausages

In cooked meats, sodium chloride is involved in taste, texture and flavour release. So a reduction in the salt content may have an impact on overall perception and acceptability. The aim of this study was to evaluate the influence of composition on sodium release and saltiness intensity in chicken sausages. The rheological properties of the sausages differed according to composition. Temporal sodium release and temporal saltiness intensity were evaluated by four selected subjects when eating sausages. Abstract The dual aim of this research is, firstly, to analyze the physiological and unconscious emotional response of consumers to a new technological product and, secondly, link this emotional response to consumer conscious verbal reports of positive and negative product perceptions.
