Fast detection of bovine milk in Rocquefort cheese with phastsystem by gel isoelectric focusing and immunoblotting
1992
.Summary - A fast procedure for the detection of bovine milk in Roquefort cheese is described. It is based on the separation by rapid isoelectric focusing on Phasteysterne apparatus of 12-caseinsfrom the milk of the 2 species. The presence of bovine milk is also confirmed by the detection in the electrophoretic pattern of a ~-casein derived peptide from bovine milk, during cheese ripening, identified by immunoblotting. By using Ihis procedure, levels of bovine milk as low as 5% were easily delecled in Roquefort cheese ripened for a period varying from 10 days to 5 months.
Neutral volatile compounds in the raw milks from different species
1993
SummaryA comparative study was carried out on the flavour constituents of bovine, ovine, caprine and water buffalo fresh raw milks. The volatiles were isolated from milks by means of vacuum distillation and liquid–liquid extraction. Eighty neutral volatile compounds were identified using high resolution gas chromatography (HRGC) and HRGC-mass spectrometry. About 30 of these components have not been detected previously in milk. The volatiles in milk were similar for the four species, although several quantitative differences might explain the different odours. The volatiles consisted mainly of ethyl esters, especially those derived from butyric and hexanoic acids. Dimethylsulphone alone comp…

Pushing the limits of STEC molecular risk assessment: identification of genes specifically induced in vivo as potential new genetic biomarkers
2017
National audience; Epidemiologic studies reveal that only few virulence factors are frequently associated with Shiga toxin-producing Escherichia coli (STEC) strains that cause severe disease in humans. Among them, Shiga toxins (Stx) is required for the development of the most severe symptoms in STEC infected patients but is not strictly sufficient to make an E. coli strain pathogenic to human. Indeed, many STEC strains isolated from rearing animals have never been implicated in human disease. It therefore appears crucial to increase our knowledge on STEC pathogenesis at the molecular level. We developed a RIVET (Recombination-based in vivo expression technology) strategy in order to identif…
The mKdV equation and multi-parameters rational solutions
2021
Abstract N -order solutions to the modified Korteweg–de Vries (mKdV) equation are given in terms of a quotient of two wronskians of order N depending on 2 N real parameters. When one of these parameters goes to 0, we succeed to get for each positive integer N , rational solutions as a quotient of polynomials in x and t depending on 2 N real parameters. We construct explicit expressions of these rational solutions for orders N = 1 until N = 6 .

Potential anticarcinogenic peptides from bovine milk.
2012
Bovine milk possesses a protein system constituted by two major families of proteins: caseins (insoluble) and whey proteins (soluble). Caseins (αS1,αS2,β, andκ) are the predominant phosphoproteins in the milk of ruminants, accounting for about 80% of total protein, while the whey proteins, representing approximately 20% of milk protein fraction, includeβ-lactoglobulin,α-lactalbumin, immunoglobulins, bovine serum albumin, bovine lactoferrin, and lactoperoxidase, together with other minor components. Different bioactivities have been associated with these proteins. In many cases, caseins and whey proteins act as precursors of bioactive peptides that are released, in the body, by enzymatic pro…
Bioaccessibility Study of Aflatoxin B1 and Ochratoxin A in Bread Enriched with Fermented Milk Whey and/or Pumpkin
2021
The presence of mycotoxins in cereals and cereal products remains a significant issue. The use of natural ingredients such as pumpkin and whey, which contain bioactive compounds, could be a strategy to reduce the use of conventional chemical preservatives. The aim of the present work was to study the bioaccessibility of aflatoxin B1 (AFB1) and ochratoxin (OTA) in bread, as well as to evaluate the effect of milk whey (with and without lactic acid bacteria fermentation) and pumpkin on reducing mycotoxins bioaccessibility. Different bread typologies were prepared and subjected to an in vitro digestion model. Gastric and intestinal extracts were analyzed by HPLC–MS/qTOF and mycotoxins bio…
Deoxycholic Acid Methyl Ester — a Novel Bacterial Metabolite of Cholic Acid
1985
Summary Methyl deoxycholate was identified as a novel bacterial metabolite of cholate, produced anaerobically by strains of most saccharolytic Bacteroides species ( B. distasonis, B. eggerthii, B. fragilis, B. incommunis, B. thetaiotaomicron, B. uniformis, B. variabilis, B. vulgatus , and unnamed species). It was also detected with a few strains of Eubacterium and Lactobacillus species. Among 2476 freshly isolated human fecal cultures the frequency of carboxyl group esterification was comparable with that of 7α-dehydroxylation (92 versus 102 cultures). Both activities were, however, lost for unknown reasons after serial transfers. Two of ten mixed fecal cultures tested esterified 3α,7α- or …
Stability and extraction of bioactive sulfur compounds from Allium genus processed by traditional and innovative technologies
2017
Abstract Since ancient times, species from the Allium genus have been used in both culinary and medicinal applications. The health promoting properties, with well documented “evidence-based” studies, were attributed to the genus’ high content of bioactive organosulfur compounds. For these reasons, the organosulfur compounds have attracted interest in both food and pharmaceutical industries to be used as additives or supplements. Therefore, improvement in the extraction and stability during processing and storage of these molecules is crucial. The presented review documents the effects of traditional and innovative processing techniques on the extraction and stability of organosulfur compoun…
