Caramel odor: Contribution of volatile compounds according to their odor qualities to caramel typicality

Abstract Odor of food constitutes one of the main drivers of the consumers' acceptance. Its characterization thus represents a main challenge for the food industry. Gas chromatography/olfactometry (GC/O) constitutes an intersection between physico-chemical and sensory studies by using the human nose as a detector to evaluate the odor properties of volatile compounds. Many studies on life history strategies of small mammals under predation risk are based on assumptions that mammalian predators use scent marking from prey in searching and hunting. This is especially true for small mustelids hunting in the tunnels and cavities of their prey. It is assumed that weasels use the estrous signs of female voles as hunting cues, which exposes such females to a more pronounced risk of predation. Food-attraction conditioning in the snail, Helix pomatia

Adult pulmonate snails (Helix pomatia) were released equidistant between two types of food, carrot and potato, respectively. Naive snails moved in different directions and did not locate either food above chance, although both foods were readily eaten upon direct contact. After a single carrot feeding episode, 75% of the carrot-fed snails moved directly towards the carrot and ate it. Conversely, potato-fed snails located the potato in 67% of the cases. Snails that were fed apple or lettuce behaved like naive animals, with the majority of animals (75% in both cases) locating neither the carrot nor the potato. In Eurycotis floridana, male calling behavior is associated with the sex pheromone released by the anterior part of tergites. 2, 7, and 8. Glandular extracts of tergite 7 revealed a characteristic odor of caramel which is attractive at a distance for the females. We identified the two compounds responsible for this odor, 4-hydroxy-5-methyl-3(2H)-furanone and 4-hydroxy-2,5-dimethyl-3(2H)-furanone. These compounds are known to be very important as flavor components of foods, but this is the first time that they have been. identified as natural insect products. Various amounts of the identified compounds were tested, and their biological function is discussed.

Occupational hygiene in a Finnish drum composting plant

Bioaerosols (microbes, dust and endotoxins) and volatile organic compounds (VOCs) were determined in the working air of a drum composting plant treating source-separated catering waste. Different composting activities at the Oulu drum composting plant take place in their own units separated by modular design and constructions. Important implication of this is that the control room is a relatively clean working environment and the risk of exposure to harmful factors is low. However, the number of viable airborne microbes was high both in the biowaste receiving hall and in the drum composting hall. Pheromone-induced odor learning modifies Fos expression in the newborn rabbit brain.

Research report; International audience; Associative learning contributes crucially to adjust the behavior of neonates to the permanently changing environment. In the European rabbit, the mammary pheromone (MP) excreted in milk triggers sucking behavior in newborns, and additionally promotes very rapid learning of initially neutral odor cues. Such stimuli become then as active as the MP itself to elicit the orocephalic motor responses involved in suckling.
