Abstract Sauna bath brings about numerous acute changes in hormone levels, partly akin to other stressful situations, partly specific for sauna. Norepinephrine increases in those accustomed to sauna bath. Sweating increases the production of antidiuretic hormone, and the renin–angiotensin system becomes activated. Of the anterior pituitary hormones, growth hormone (GH) and prolactin (PRL) secretion is increased. Also β-endorphin has been frequently reported to increase, whereas the responses of antidiuretic hormone and cortisol are variable, probably depending on the type of sauna exposure. The changes of metabolites in pork patties with different antioxidants added (control without antioxidants, 200 mg kg(-1) butylated hydroxytoluene (BHT) and 250 mg kg(-1) guarana seed extracts (GSEs)) under modified atmosphere (80% O-2 and 20% CO2) for 18 days of refrigerated storage were evaluated. Untargeted metabolomic approach based on UHPLC-ESI-QTOF-MS analysis was applied. A cDNA, able to complement the S-adenosyl-L-methionine decarboxylase (SAMdC; EC 4.1.1.50)-defective yeast strain Y342, has been isolated from pea (Pisum sativum L.). Expression of the SAMdC gene was characterised during pea development. Northern analysis showed a differential expression of the pea SAMdC gene in vegetative and reproductive tissues. The highest SAMdC mRNA levels were found in undifferentiated callus and tissues with high rates of cell division, and at the onset of fruit development.
