Preservation of vitamins content in Cuccìa using an innovative method of processing

Cuccìa is a traditional Sicilian food prepared by boiling whole durum wheat kernels, in water, for many hours. This process destroys the vitamins E and B contents of crude kernels. It was rated a method to prepare the Cuccìa, preserving the vitamin content. Four varieties of durum wheat were processed comparing the traditional cooking method (TR-boiling for 5/6 hours), and an innovative one (IN-grains scarification, germination, and cooking at 50 °C for 2 hours). In the present work the microbial dynamics in wheat kernels were evaluated over time. The main aim of this research was to study the resistance of lactic acid bacteria (LAB) and yeasts associated to unprocessed cereals used for bread making during long term conservation. The tumor suppressor p53 exerts its anti-neoplastic activity primarily through the induction of apoptosis. Different remote sensing methods for detecting variations in agricultural fields have been studied in last two decades. Le varietà di grano duro più vocate al biologico

Nella stagione 2015-2016 sono stati realizzati 12 campi, localizzati in 9 regioni e aggregati in tre macroareali: Sud-Isole (5 campi), versante Tirrenico dell’Italia Centrale (3 campi), versante Adriatico dell’Italia Centrale e Nord (4 campi). In tutti i campi sono state messe a confronto 22 varietà, di cui 1 (Orizzonte) al primo anno di prova, utilizzando uno schema sperimentale a blocchi randomizzati con 3 o 4 ripetizioni. Tutte le cultivar sono state fornite non conciate dalle ditte sementiere (la scheda agronomica delle prove e i principali rilievi eseguiti sono onsultabili all’indirizzo internet riportato in fondo all’articolo).

Le varietà di grano duro per le semine 2014: Sicilia.

La rete di prove di confronto varietale di grano duro, condotta in Siclia con il coordinamento del CRA-ACM, ha previsto nell’annata 2013-2014 l’allestimento di 4 campi in differenti ambienti: Libertinia (Catania), Catania, Cammarata e S. Stefano Quisquina (Agrigento). Fra le sette varietà al primo anno di valutazione, emergono le performance di Antalis, che ha manifestato ottima capacità produttiva, precocita’ di spigatura, buone caratteristiche merceologiche, contenuto proteico medio e buona resistenza alle malattie.
