Przedmiotem niniejszego opracowania jest wodzionka – jedna z charakterystycznych zup śląskich, która w ostatnich kilku latach stała się kulinarną atrakcją Górnego Śląska. The issue in question is the culinary heritage of Silesia, represented in the List of traditional products of the Ministry of Agriculture and Rural Development (created in 2004). Basing on the example of wodzionka and other soups made of water and bread, the authors bring emphasis to some important issues associated with the description of selected traditional foods and kitchen products that lead to understatements and overinterpretations. The article proposes also a new definition of traditional dish, which takes into account two elements of a recipe (fixed and variable).

The subject of the study is one of the characteristic Silesian soups - wodzionka, which has since 2007 been on the List of Traditional Products kept by the Ministry of Agriculture and Rural Development. The reference literature and the current field research indicate that the characteristic soup with bread and garlic is consumed throughout Upper Silesia - both in rural and industrial communities. The genesis of its consumption, just as that of other traditional dishes, is directly associated with once meager nutrition. Na beztydzień i od święta - o tradycyjnych zupach w śląskim menu

Przedmiotem niniejszego artykułu jest śląskie menu ze szczególnym uwzględnieniem tradycyjnych zup, czyli polewek. Na podstawie materiałów archiwalnych oraz materiałów pozyskanych w trakcie prowadzonych badań terenowych wśród ludności autochtonicznej dwóch województw: opolskiego i śląskiego (w latach 2007-2017) omówiono w nim wybrane, charakterystyczne zupy spożywane w ciągu tygodnia oraz te obowiązujące w dni świąteczne. Zwrócono w nim także uwagę na przemiany, jakim one podlegały w ciągu wieków. W opracowaniu zaprezentowane zostały następujące zupy. zupy z chleba, tj. wodzionka, germuszka i biermuszka-, dalej zaś żur, siemieniotka/konopiotka, rosół i rosół z młodzików.
