Functional investigation and applications of the acetylesterase activity of the Citrus sinensis (L.) Osbeck peel

The hydrolysis of acetyl moieties on a set of commercially relevant substrates was performed by employing the whole tissue of Citrus sinensis (L.) Osbeck peel as an efficient biocatalyst in mild reaction conditions with high degree of regioselectivity. The reaction is done in aqueous media and the product is easily recovered. Optimal reaction conditions were deduced and two practical applications were investigated: the elaboration of acetylglicerols and the preparation of vitamin K1 precursor. Peel waste (flavedo and albedo) from orange juice manufacturing was successfully employed as a biocatalyst.

Cytotoxicity of a new hemostatic agent on human pulp fibroblasts in vitro

Objective: The objective of this study was to evaluate the cytotoxicity of the plant extract ankaferd blood stopper (ABS) in vitro. Study Design: ABS was eluted with fresh Dulbecco's Modified Eagle's Medium (DMEM) without serum for 72 h, at 37°C. The cells treated with various dilutions of ABS were seeded into 96-well microplate at 10 4 /well in triplicates. Cells without treatment served as a control group. Age-related Macular Degeneration (AMD) is the leading cause of visual loss in Western countries after the age of 50y. Based on large-scale epidemiologic studies, it appears now as evident that omega-3 polyunsaturated fatty acids (PUFAs) provide benefits in preventing both, early and late stages of AMD. In European regions of cold climate, S. uvarum can replace S. cerevisiae in wine fermentations performed at low temperatures. S. uvarum is a cryotolerant yeast that produces more glycerol, less acetic acid and exhibits a better aroma profile. However, this species exhibits a poor ethanol tolerance compared with S. cerevisiae. The influence of backslopping on lactic acid bacteria diversity in tarhana fermentation

Tarhana is produced at batch systems in which the microbiota has changed accordingly to the microbial load from ingredients. In order to stabilize the microbiota, the effects of backslopping carried out under different temperature regimes (25 and 30 °C), pH (3.70 and 4.00) and inoculation rates (5, 10 and 15%) on lactic acid bacteria (LAB) diversity were determined in tarhana dough. LAB and Total Aerobic Mesophilic Bacteria (TAMB) numbers increased in all tarhana dough samples subjected to backslopping.
