Red grape Nero d’Avola cultivar grape pomace powder (GPP) was applied during fresh ovine cheese production in order to increase polyphenol content. Before cheeses were produced, the bacteria of a freeze-dried commercial starter culture were isolated and tested in vitro against GPP. Two dominant strains, both resistant to GPP, were identified. Thestarter culture was inoculated in pasteurized ewe’s milk and the curd was divided into two bulks, one added with 1% (w/w) GPP and another one GPP-free. Ethyl hexanoate transfer in paper and plastic food packaging by sorption and permeation experiments

The barrier properties of one treated paper packaging and one standard plastic film (bi-oriented polypropylene, biOPP) were assessed for ethyl hexanoate. Three methods based either on sorption (gravimetry and micro-atmosphere-derived method) or permeation kinetic determination were used in controlled conditions of aroma vapor concentration (107 Pa), temperature (25 degrees C) and relative humidity (about 0 %). Improvement of partition coefficients determination of aroma compounds in food matrices by the phase ratio variation method

The Phase Ratio Variation (PRV) method is a very valuable method commonly used for liquid/vapor partition coefficients data acquisition of aroma compounds. Nevertheless, some limits are linked to this method, especially for volatile compounds. A careful examination of the PRV equation leads us to propose the following expression: 1/Cvap-real =(nliq/n0) x 1/Cvap-ideal = (nliq/n0) x (1/KC0 + (1/Co) b), We performed an examination for two cases of K values (K1=0.001 and K2=0.05), putting forward that a carefully choice of b range values is crucial for reliability of the regression calculation 1/A versus b.

Varying plant protein sources in the diet of sea bass Dicentrarchus labrax differently affects lipid metabolism and deposition

The liver activity of lipogenic enzymes, the lipid content in various tissues, and plasma lipid levels of major, were measured in sea bass (D. labrax) fed over 96 days either a, fish meal-based control diet or preparations where 70% of fish meal protein was replaced by wheat gluten singly or in combination with pea or soybean meals. Relative to the controls, sea bass fed the wheat gluten-based diet resulted in stimulated lipogenesis in liver and increased lipid deposition in muscle. Biochar pore space consists of porosity of multiple length scales. In direct water holding applications like water storage for plant water uptake, the main interest is in micrometre-range porosity since these pores are able to store water that is easily available for plants. Physico-chemical characterisation of a non-conventional food protein source from earthworms and sensory impact in arepas

International audience; This study aimed to characterise a non-conventional protein source: a powder made from earthworms, and to evaluate its potential use as human food. The way it was prepared led to low solubility and wide particle size distribution. Sensory analysis was used to assess the acceptability and the organoleptic properties of maize-based pan-cakes fortified with this novel protein powder. Satisfying products were obtained with a substitution level of 5.5% (w/w) earthworm powder in pan-cakes. Priming effect increases with depth in a boreal forest soil

Abstract Climate warming increases labile carbon (C) inputs to soil through increased photosynthesis and C allocation belowground. This could counterintuitively lead to losses of soil C via priming effects (PE): the stimulation of soil organic matter (SOM) decomposition caused by labile C addition. Systematic quantification of PEs in different ecosystems is needed. We measured PEs of free-living soil microbes in different layers of a boreal forest soil, and found that the relative magnitude of the PE increased with soil depth.
