Reconstructing Bronze Age diets and farming strategies at the early Bronze Age sites of La Bastida and Gatas (southeast Iberia) using stable isotope …

2020

The El Argar society of the Bronze Age in the southeast of the Iberian Peninsula (2200–1550 cal BCE) was among the first complex societies in Europe. Its economy was based on cereal cultivation and metallurgy, it was organized hierarchically, and successively expanded its territory. Most of the monumentally fortified settlements lay on steeply sloped mountains, separated by fertile plains, and allowed optimal control of the area. Here, we explore El Argar human diets, animal husbandry strategies, and food webs using stable carbon and nitrogen isotope analysis of charred cereal grains as well as human and animal bone collagen. The sample comprised 75 human individuals from the sites of La Ba…

Gluten-free flours from cereals, pseudocereals and legumes: Phenolic fingerprints and in vitro antioxidant properties.

2018

The interest in gluten-free (GF) products increases together with the increase in gluten-sensitive people. However, GF foods might have decreased nutritional quality as compared to the gluten containing counterparts. In this work, an investigation of the phenolic and antioxidant profile in 18 GF flours belonging to legumes, cereals and pseudocereals was achieved. Significant differences could be observed across samples. Total phenolic content was highest in violet rice flours, whereas total anthocyanins were highest in violet, nerone, and black rice flours. FRAP and ORAC antioxidant activities were correlated to phenolic contents and found to be higher in violet rice flours. Metabolomics hi…

Deoxynivalenol contamination in cereal-based foodstuffs from Spain: Systematic review and meta-analysis approach for exposure assessment

2022

Abstract The presence of deoxynivalenol (DON) has been repeatedly detected in cereal-based products collected from Spanish markets over the last years. Hence, the aim of this study was to conduct a systematic review and meta-analysis of the concentration and prevalence of DON in cereals and cereal-based products from Spanish markets intended for human consumption, in order to integrate the available data. Then, an exposure assessment was performed based on national consumption data. Results revealed a strong impact of DON in breakfast cereals (pooled concentration = 105.34 ng/g; pooled prevalence = 58%) and bread and derived products (pooled concentration = 95.17 ng/g; pooled prevalence = 6…

Molecular analysis of the dominant lactic acid bacteria of chickpea liquid starters and doughs and propagation of chickpea sourdoughs with selected W…

2020

Abstract Fermented chickpea liquid is used as a leavening agent in chickpea bread production. In the present study, traditional chickpea liquid starter and dough samples were collected from bakeries in Turkey and microbiologically investigated. Culture-independent analysis for microbiota diversity, performed by MiSeq Illumina, identified Clostridium perfringens as major group in all samples, while Weissella spp. Dominated LAB community. A culture-dependent methodology was applied and 141 isolates were confirmed to be members of the LAB group based on 16s rRNA gene sequence analysis. In particular, 11 different LAB species were identified confirming the high frequency of isolation of weissel…
