Chewing simulation: a way to understand relationships between mastication, food breakdown and flavour release

International audience; Flavour release during eating foods is mainly function of the physico-chemical properties of the food matrix and of what occurs in mouth during the chewing process. Microbial transglutaminase (MTGase) has been currently utilized to form new food structures and matrices with high physicochemical stability. Incorporation of this multi-functional enzyme into structural composition of milk protein-based products, such as cheese and ice cream, can not only be a successful strategy to improve their nutritional and technological characteristics through intramolecular cross-linking, but also to reduce the production cost by decreasing fat and stabilizer contents. Combined use of modified atmosphere packaging and high pressure to extend the shelf-life of raw poultry sausage

International audience; The contribution of modified atmosphere packaging (MAP) in extending the shelf-life of high-pressure treated raw poultry sausages was examined by considering microbial and oxidative stability (TBARs) aspects. Raw poultry sausages packaged under air or modified atmosphere (50% CO2–50% N2) were pressurized at 500 MPa during 5 min at a maximum temperature of 10.5 °C, subsequently allowed to refrigerated storage during 22 days. Classifying DME vs Normal SD-OCT volumes: A review

International audience; This article reviews the current state of automatic classification methodologies to identify Diabetic Macular Edema (DME) versus normal subjects based on Spectral Domain OCT (SD-OCT) data. Addressing this classification problem has valuable interest since early detection and treatment of DME play a major role to prevent eye adverse effects such as blindness. Classification of SD-OCT Volumes with LBP: Application to DME Detection

International audience; This paper addresses the problem of automatic classification of Spectral Domain OCT (SD-OCT) data for automatic identification of patients with Diabetic Macular Edema (DME) versus normal subjects. Our method is based on Local Binary Patterns (LBP) features to describe the texture of Optical Coherence Tomography (OCT) images and we compare different LBP features extraction approaches to compute a single signature for the whole OCT volume. "Awake Surgery" of Slow-Growing Tumors and Cortical Excitability Measured by EEG Recordings. Preliminary Results

International audience; To investigate interhemispheric imbalance following "awake surgeries" of slow-growing tumors we recorded EEG in a visuo-manual RT paradigm. Increase of cortical excitability within the ipsilesional hemisphere was signed by increased ERPs amplitude for two patients. The cortical excitability in the lesioned hemisphere may be increased to maintain performances and cerebral plasticity.
