Hosts are typically infected with multiple strains or genotypes of one or several parasite species. These infections can take place simultaneously, but also at different times, i.e. sequentially, when one of the parasites establishes first. Anthocyanins of Coloured Wheat Genotypes in Specific Response to SalStress

The present study investigated the effect of salt stress on the development of adaptive responses and growth parameters of different coloured wheat genotypes. The different coloured wheat genotypes have revealed variation in the anthocyanin content, which may affect the development of adaptive responses under increasing salinity stress. In the early stage of treatment with salt at a lower NaCl concentration (100 mM), anthocyanins and proline accumulate, which shows rapid development of the stress reaction. Prospects for the microbial production of food flavours

The microbial production of natural flavours has been extensively studied during the past decade, and some processes are currently being exploited commercially. However, in the case of flavour compounds such as lactones and some aromatic compounds, the lack of basic information on their metabolism, as well as their high toxicity, are two main barriers to industrial production. The development of novel and cheap production processes, such as solid-state fermentation, may help overcome some of the current limitations of microbial flavour production, as well as widening the spectrum of biotechnologically accessible compounds.

High‐power ultrasound altered the polyphenolic content and antioxidant capacity in cloudy apple juice during storage

The aim was to investigate the influence of high‐power ultrasound treatment (HPU) on polyphenolic stability and antioxidant capacity in cloudy apple juice during 7 days of storage at 4°C. HPU (100 W, 30 kHz frequency) was operated at: (i) amplitude 40 versus 80%, (ii) the probe diameter 7 versus 10 mm, and (iii) treatment time of 3, 6, and 9 min. Total phenols (TP), total flavan‐3‐ols (TFL), and in vitro antioxidant capacity (DPPH and FRAP) were determined spectrophotometrically.
