Effect of high methoxyl pectin on pea protein in aqueous solution and at oil/water interface

International audience; The effect of the addition of high methoxyl pectin on the stability of pea protein isolate emulsions was investigated. Except for low pectin concentrations at acidic pHs where bridging flocculation occurred the addition of pectin improved emulsion stability to pH changes and depletion flocculation induced by maltodextrin addition. The mechanism of pectin induced stability was probed by measuring protein-pectin complex formation in solution, zeta potential of the emulsions droplets and the change in surface viscoelasticity on pectin addition. Dynamical stability of a many-body Kapitza pendulum

We consider a many-body generalization of the Kapitza pendulum: the periodically-driven sine-Gordon model. We show that this interacting system is dynamically stable to periodic drives with finite frequency and amplitude. This finding is in contrast to the common belief that periodically-driven unbounded interacting systems should always tend to an absorbing infinite-temperature state. The transition to an unstable absorbing state is described by a change in the sign of the kinetic term in the effective Floquet Hamiltonian and controlled by the short-wavelength degrees of freedom. Unveiling signatures of topological phases in open kitaev chains and ladders

In this work, the general problem of the characterization of the topological phase of an open quantum system is addressed. In particular, we study the topological properties of Kitaev chains and ladders under the perturbing effect of a current flux injected into the system using an external normal lead and derived from it via a superconducting electrode. After discussing the topological phase diagram of the isolated systems, using a scattering technique within the Bogoliubov de Gennes formulation, we analyze the differential conductance properties of these topological devices as a function of all relevant model parameters. Phase behaviour of heteronuclear dimers in three-dimensional systems—a Monte Carlo study

Monte Carlo simulation in the grand canonical ensemble, the histogram reweighting technique and finite size scaling are used to study the phase behaviour of dimers in three-dimensional systems. A single molecule is composed of two segments A and B, and the bond between them cannot be broken. The phase diagrams have been estimated for a set of model systems. Different structures formed by heteronuclear dimers have been found. The results show a great variety of vapour–liquid coexistence behaviour depending on the strength of the interactions between segments.

Reentrant Fulde-Ferrell-Larkin-Ovchinnikov superfluidity in the honeycomb lattice

We study superconducting properties of population-imbalanced ultracold Fermi mixtures in the honeycomb lattice that can be effectively described by the spin-imbalanced attractive Hubbard model in the presence of a Zeeman magnetic field. We use the mean-field theory approach to obtain ground state phase diagrams including some unconventional superconducting phases such as the Fulde--Ferrell--Larkin--Ovchinnikov (FFLO) phase. We show that this phase is characterized by atypical behaviour of the Cooper pairs total momentum in the external magnetic field. Quasi-elastic light scattering (QELS) studies are reported, which address the early stages of aggregation of the polypentamer poly(VPGVG). This reflects the major primary structural feature of native elastin. The study is focused on the region of the phase diagram which in both its temperature and concentration range is closest to the state of affairs occurring in the course of bioelastogenesis by progressive synthesis of the precursor protein. Coarse-graining dipolar interactions in simple fluids and polymer solutions: Monte Carlo studies of the phase behavior

In this paper we investigate the phase diagram of pure dipolar substances and their mixtures with short alkanes, using grand canonical Monte Carlo simulations of simplified coarse-grained models. Recently, an efficient coarse-grained model for simple quadrupolar molecules, based on a Lennard-Jones (LJ) interaction plus a spherically averaged quadrupolar potential, has been shown to be successful in predicting single-component and mixture phase diagrams. The crystals of pure [(CH3)3NH]2[KFe(CN)6] (TrMAFe) and [(CH3)3NH]2[KCo(CN)6] (TrMACo) as well as their mixed crystals (TrMAFexCo1−x), with different ratios of x = 0, 0.12, 0.18, 0.49, 0.56, 0.73, 0.81, 1.0, have been grown from aqueous solutions. The structure of TrMACo has been determined at 360 K to be cubic (Fmm). In phase II (100 K), the TrMACo crystal is monoclinic (C2/c). The thermal stability of the pure and mixed crystals has been determined by using both DTA and TGA. Based on the DSC results, we have found a single phase transition (PT) for both pure and mixed crystals. The Fe(III) concentration was estimated by using the SEM technique. The first lanthanide complex of a 1,2,4-benzotriazinyl radical (1), Dy(1)(tbacac)3 (2, tbacac = 2,2,6,6-tetramethyl-3,5-heptane-dionato), was synthesised and found to have an antiferromagnetically ordered ground state with a metamagnetic phase diagram and a critical field of 0.91 T at 1.85 K. The application of a small dc field revealed the single-molecule magnet behaviour of 2, illustrating the coexistence of long-range antiferromagnetic order and slow relaxation of the magnetization. peerReviewed

The micro- and mesoscopic structure of reverse Pluronic 25R4 in aqueous mixtures has been studied by SANS, SAXS and shear rheology. These techniques have been able to give a deep insight into the complex structure of the system phase diagram, that includes an isotropic water-rich liquid phase L(1), and liquid crystalline phases with hexagonal, E, or lamellar order, D.
