Biogenic amines in fermented foods

Food-fermenting lactic acid bacteria (LAB) are generally considered to be non-toxic and non-pathogenic. Some species of LAB, however, can produce biogenic amines (BAs). BAs are organic, basic, nitrogenous compounds, mainly formed through decarboxylation of amino acids. BAs are present in a wide range of foods, including dairy products, and can occasionally accumulate in high concentrations. The consumption of food containing large amounts of these amines can have toxicological consequences. Although there is no specific legislation regarding BA content in many fermented products, it is generally assumed that they should not be allowed to accumulate. Humans may, therefore, be exposed to BPF, and an assessment of this risk is required. BPF has been shown to have genotoxic and endocrine-disruptor properties in a human hepatoma cell line (HepG2), which is a model system for studies of xenobiotic toxicity. In this study, we investigated the ability of HepG2 cells to biotransform BPF, because metabolism may affect the observed effects of BPF, and we compared this metabolic capacity with that of human hepatocytes. Enhancement of immunohistochemical staining

The present paper describes two simple procedures which enhance immunohistochemical staining. One is to cover the sections with a plastic film to keep the serum uniformly distributed and minimize its evaporation. Secondly, rocking of the slides has been introduced, causing the serum to flow back and forth under the plastic film. Using this system, it has been possible to test for the effect of mixing on an immunohistochemical reaction (the demonstration of calcitonin in thyroid C cells). It has been found that mixing definitely enhances the reaction during the first 8 h. No effect of serum volume was observed.

A novel prototype to closely mimic mastication for in vitro dynamic measurements of flavour release

In-vivo measurements by the APCI MS-nose method allowed temporal sensory evaluation and flavour release data to be directly correlated, but several limitations have frequently been reported.
