Early-blind individuals show impaired performance in wine odor categorization
2018
International audience; Blind individuals display superior sensory abilities in other modalities, yet results remain contradictory regarding their performance on olfactory tasks. Using complex ecological olfactory tasks, we evaluated the impact of blindness on olfactory performance. We tested 12 early-blind individuals (M = 49, SD = 13.09) and 12 sighted controls (M = 49, SD = 14.31) who were all blindfolded. Based solely on the wine odors, participants evaluated 24 pairs of wine and determined if both samples belonged to the same category (red wine, white wine, or rosé wine) or not (odor categorization), and if so, whether they were identical or not (odor differentiation). Then, they had t…
Learning to Eat Vegetables in Early Life: The Role of Timing, Age and Individual Eating Traits
2014
Vegetable intake is generally low among children, who appear to be especially fussy during the pre-school years. Repeated exposure is known to enhance intake of a novel vegetable in early life but individual differences in response to familiarisation have emerged from recent studies. In order to understand the factors which predict different responses to repeated exposure, data from the same experiment conducted in three groups of children from three countries (n = 332) aged 4-38 m (18.9 +/- 9.9 m) were combined and modelled. During the intervention period each child was given between 5 and 10 exposures to a novel vegetable (artichoke puree) in one of three versions (basic, sweet or added e…
Formulation, process conditions, and biological evaluation of dairy mixed gels containing fava bean and milk proteins: Effect on protein retention in…
2019
International audience; Food formulation and process conditions can indirectly influence AA digestibility and bioavailability. Here we investigated the effects of formulation and process conditions used in the manufacture of novel blended dairy gels (called "mixed gels" here) containing fava bean (Vicia faba) globular proteins on both protein composition and metabolism when given to young rats. Three mixed dairy gels containing casein micelles and fava bean proteins were produced either by chemical acidification (A) with glucono-δ-lactone (GDL) or by lactic acid fermentation. Fermented gels containing casein and fava bean proteins were produced without (F) or with (FW) whey proteins. The AA…
Whey proteins are more efficient than casein in the recovery of muscle functional properties following a casting induced muscle atrophy.
2013
International audience; The purpose of this study was to investigate the effect of whey supplementation, as compared to the standard casein diet, on the recovery of muscle functional properties after a casting-induced immobilization period. After an initial (I0) evaluation of the contractile properties of the plantarflexors (isometric torque-frequency relationship, concentric power-velocity relationship and a fatigability test), the ankle of 20 male adult rats was immobilized by casting for 8 days. During this period, rats were fed a standard diet with 13% of casein (CAS). After cast removal, rats received either the same diet or a diet with 13% of whey proteins (WHEY). A control group (n =…
Personnalité, stratégies d'approvisionnement et d'appariement chez les Diamants Mandarins (taeniopygia guttata)
2011
In evolutionary biology, phenotypic variation has for a long time been considered as the raw material on which natural selection acts. However, research on the consistency of behaviour led to the development of the animal personality concept during the 1990s. This concept was based on the characterization of traits such as neophobia, aggressiveness, exploratory tendencies and risk-taking behaviour. Since then, several studies have shown that personality can evolve through natural selection and is related to many life-history traits, such as dispersal or anti-predator behaviour.Pairing strategies and foraging strategies are two fundamental components of an organism’s life, but their relation…
Exploration of neuronal and glial plasticity in the melanocortin system at the meal in a mouse model.
2017
In 2015, Nature published the largest pangenomic association study to date linking genetic variants to body mass index. This study highlighted the role of the central nervous system in vulnerability to obesity and supports an original concept that cerebral plasticity plays an important role in the control of energy balance. Thus, reduced cerebral plasticity capacities could lead to inadequate dietary behaviors, which would increase the risk of weight gain under caloric pressure. The anorectic neurons POMC and the orexigenic neurons AgRP of the melanocortin system, which control the energy balance, actually show synaptic plasticity properties in the adult brain. These phenomena are shown in …
Riesgos infecciosos alimentarios y embarazo: ¿cuál es la información de la que disponen los profesionales de la salud?
2020
This study focuses on the nature and origin of prevention information available to health professionals in the field of nutrition for pregnant women. It focuses more specifically on information sharing practices regarding two infectious risks: toxoplasmosis and listeriosis. The information available to professionals on these potential risks comes mainly from institutional texts and manuals. We will focus here on the recommendations found in institutional texts, which show striking characteristics which need to be taken into account in the training of professionals: such recommendations are evolving in nature, with shifts in clarity and degree of precision, and are diverse in terms of messag…
Habituation and adaptation to odors in humans
2017
indexation en cours; Habituation, or decreased behavioral response, to odors is created by repeated exposure and several detailed characteristics, whereas adaptation relates to the neural processes that constitute this decrease in a behavioral response. As with all senses, the olfactory system continually encounters an enormous variety of odorants which is why mechanisms must exist to segment them and respond to changes. Although most olfactory habitation studies have focused on animal models, this non-systematic review provides an overview of olfactory habituation and adaptation in humans, and techniques that have been used to measure them. Thus far, psychophysics in combination with moder…
Impact of relative air humidity fluctuations on the survival of Listeria monocytogenes : application to improve hygiene in food processing environment
2016
Environmental hydration fluctuations influence microorganism viability and activity. The air relative humidity (RH) is a potentially effective parameter to control the development and the persistence of pathogenic microorganisms. However, efficiency of this parameter remains not well characterized compared to others environmental factors such as pH or temperature. Drying is the final step of cleaning and disinfection processes used in the food industry. However, if this process is empirically used, it could also be used to improve the decontamination of surfaces in premises and reduce the persistence of microorganisms. Despite cleaning and disinfection, Listeria monocytogenes is commonly fo…
