Sodium content in human diet being excessive in many industrialized country, health authorities recommended its progressive reduction in food products in order both to improve public health and to decrease health cost (1). Cheese is one of the most important sodium vectors. However, salt (NaCl) is not only responsible for saltiness but is also implied in other functionalities such as flavour enhancement, texture, preservation (2). Les restes d'animaux de l'espace public de l'oppidum du Titelberg

Cette présentation sera consacrée aux principaux résultats de l'étude des restes animaux (env. 100000) issus des fouilles menées entre 1997 et 2003 par J. Metzler sur la zone des sanctuaires de l'oppidum du Titelberg. Les niveaux analysés sont datés entre le premier siècle avant notre ère et le IIIe après. Les dépôts d'ossements, très riches en bœufs, témoignent d'une sélection de sujets de qualité, la plupart âgés de moins de quatre ans. Ces animaux ont fait l'objet d'une découpe bouchère dont témoignent des rejets spécifiques et de grande ampleur. This first synthesis concerns the animal bones, discovered since 1975 in Aventicum, the capital of Roman Switzerland. It is supported by the analysis of several residential districts, public sectors and suburbs, which represent five hundred chronological complexes and 74000 animal bones, dated from the Ist, to the IVth Century AD. During these centuries, Aventicum was incorporated to the Roman province of Gallia Belgica, then was raised to the status of a colonia and finally declined with the Empire.The analysis of bones was made to study various mutations which occurred during the occupation of the city. Quelles stratégies pour les musées sur internet ? Entre " click and mortar " et " mortar and click "

Many companies now use the Internet as part of a click & mortar strategy. This strategy is also used in the museum field, but its consequences have not been evaluated yet. A quantitative study carried out on a sample of 388 visitors, at the Bibracte Museum (France), indicates that the quality of an internet website, as well as the satisfaction and trust experienced by Internet users when browsing, have direct positive influence on word-of mouth and the actual museum visit. It seems therefore appropriate to integrate the internet website to the whole management of cultural and artistic activities, without forgetting to take into account the specificities of this particular field.

Ancient architecture in Provence between the Iron Age and the Imperial era: the pillars of the Château-Bas site in Vernègues

The site of Château-Bas (Vernègues, Bouches-du-Rhône), famous above all for its Augustan Roman temple, has yielded a set of pillars decorated either with writhing snakes or with straight rods. As yet there are no known parallels to such pillars. The discovery of a fragment of a pillar reused in a 1st c. AD structure demonstrates that these carvings are ancient. The architectural study of the fragments and comparison with other sculptural elements from southern Gaul suggest they date approximately to the turn of the millenium.
