Changes in antioxidant defense are unknown in hypertension associated with metabolic disorders induced by high-fructose feeding. Die uber die Norm gesteigerte Fettsaureoxydation bei diabetischen Tieren wird durch Dauerinfusion aller untersuchten Kohlenhydrate mit Ausnahme von Glucose signifikant gehemmt. Die starkste Wirkung hat Sorbit; dann folgen Xylit, Fructose und Glycerin; Ribit hat die schwachste Wirkung.

A new sensitive medium was developed to screen and isolate mutagenic Leuconostoc oenos strains defective in malolactic fermentation. The essential components of the medium included fructose (22 mM), l -malic acid (74.6 mM), bromocresol green (as pH indicator), and cellulose powder. The wild-type colonies turned blue, but defective malolactic colonies gave an acid reaction and remained yellow-green.

Zygosaccharomyces bailii possesses a constitutive malic enzyme, but only small amounts of malate are decomposed when the cells ferment fructose. Cells growing anaerobically on glucose (glucose cells) decompose malate, whereas fructose cells do not. Only glucose cells show an increase in the intracellular concentration of malate when suspended in a malate-containing solution. The transport system for malate is induced by glucose, but it is repressed by fructose. The synthesis of this transport system is inhibited by cycloheximide.
