Abstract The aim of this study was to enhance the anti-inflammatory potential of grape (Vitis vinifera L.) seed extract (GSE) in lipopolysaccharide (LPS) activated murine macrophage RAW264.7 cells. The total phenol content of GSE was 112.66 mg GAE/g in Carignan, 142.33 mg GAE/g in Merlot and 161.66 mg GAE/g in Syrah. GSE contained 12 phenol compounds including 8 flavan-3-ols (catechin, epigallocatechin gallate, epicatechin, procyanidin b1, procyanidin b4, procyanidin b2), 3 flavonols (kaempferol, myricitrinand quercetin) and only 1 phenolic acid (gallic acid). Flavonoids are important food components with antioxidant properties and many of them have been described as tyrosinase inhibitors. Oxidation of quercetin, kaempferol, morin, catechin, and naringenin by mushroom tyrosinase and their influence on the oxidation of l-dopa and l-tyrosine was studied. Reaction rates measured spectrophotometrically and by oxygen consumption differed substantially. All tested flavonoids reacted with 4-tert-butyl-o-benzoquinone and/or 4-methyl-o-benzoquinone, although at different rates. Biothiols, taurine, and flavonols, as well as tocopherols and carotenoids have been assessed in the edible pulp of Sicilian red (Sanguigna), yellow (Surfarina), and white (Muscaredda) cultivars of cactus pear. The yellow cultivar has the highest level of reduced glutathione (GSH, 8.1 +/- 0.78 mg/100 g pulp), whereas the white cultivar showed the highest amount of cysteine (1.21 +/- 0.12 mg/100 g pulp). Taurine accounted for 11.7 +/- 1.0 mg/100 g in the yellow pulp, while lower levels were measured in the others. Abstract A total of 35 honey samples from different regions of Algeria were studied to determine their phenolic profiles. Phenolic compounds, products of the secondary metabolism of plants, were extracted with amberlite XAD-4 and analysed by liquid chromatography, with diode array detection and electrospray ionisation mass spectrometry in negative ion polarity. By using colorometric assays, Erica honeys showed the highest content of phenolic compounds and flavonoids (245 ± 54 mg GAE/100 g and 29 ± 6 mg QE/100 g, respectively). Abstract Following the analysis of terpenes present in new lemon and grapefruit “IntegroPectin” pectins obtained via the hydrodynamic cavitation of industrial lemon and grapefruit processing waste, the HPLC‐MS analysis of flavonoid and other phenolic compounds reveals the presence of eriocitrin, naringin, hesperidin and kaempferol typical of the respective citrus fruits. The pectic fibers rich in rhamnogalacturonan‐I regions act as chemical sponges adsorbing and concentrating at their outer surface highly bioactive citrus flavonoids and terpenes.
