Development of a sensory tool to assess overall liking for the fatty, salty and sweet sensations

Abstract Understanding the origin of the overconsumption of too high levels of sucrose, sodium chloride and lipids in foods raises the question of the influence of the hedonics for these sensations. To better understand this relationship, a sensory tool that enables measurement of liking towards sweet, salty or fatty sensations is required. This liking towards a sensation has to be understood as an overall attractiveness of the sensation. Associations between food consumption patterns and saliva composition: Specificities of eating difficulties children

Identifying objective markers of dietwould be beneficial to research fields such as nutritional epidemiology. As a preliminary study on the validity of using saliva for this purpose, and in order to explore the relationship between saliva and diet, we focused on clearly contrasted groups of children: children with eating difficulties (ED) receiving at least 50% of their energy intake through artificial nutrition vs healthy controls (C). Cet article propose une analyse historique du processus de verrouillage du système agroalimentaire en défaveur des légumineuses à graines, à l’aune des théories évolutionnistes. Plusieurs mécanismes d’autorenforcement permettent de comprendre pourquoi ces espèces sont de moins en moins cultivées en France face à un système agro-industriel qui s’est spécialisé en faveur des céréales, favorisant à l’amont l’usage d’engrais azotés de synthèse et limitant à l’aval les investissements pour les légumineuses en alimentation humaine.
